1/2 cup fresh orange juice
1 Tbsp orange zest
1 1/2 Tbsp fresh lemon juice
1/4 cup olive oil
2 Tbsp hot sauce
2 Tbsp dijon mustard
2 garlic cloves, (minced)
3 1/2 lbs boneless chicken thighs, (trimmed of excess fat)
1 tsp chopped parsley, (for garnish (optional))
2 Tbsp butter
1/4 cup honey
1/4 cup fresh orange juice
2 tsp orange zest
1/4 cup BBQ sauce
2 Tbsp dijon mustard

Steps:

  • In a medium mixing bowl whisk together orange juice, orange zest, lemon juice, olive oil, hot sauce, dijon mustard and garlic.
  • Place chicken thighs in a gallon size resealable bag, pour marinade over chicken then seal bag while pressing out excess air.
  • Rub marinade over chicken, transfer to refrigerator and let marinate 1 - 6 hours.
  • Preheat a grill over medium-high heat to about 400 degrees.
  • While grill is preheating prepare glaze - in a small saucepan melt butter over medium heat.
  • Whisk in honey, orange juice, orange zest, BBQ sauce and dijon mustard and remove from heat. Set aside about 1/3 cup for serving.
  • Grill chicken about 4 minutes per side then brush with glaze and grill until cooked through (165 degrees in center) and slightly charred about 2 minutes per side more.
  • Serve warm with reserved glaze, garnished with parsley if desired.

2 cloves garlic, crushed
Zest and juice of 2 limes
1 teaspoon chili powder
1/4 teaspoon crushed red-pepper flakes
4 boneless chicken breasts, pounded to 1/4-inch thickness
Salt and freshly ground pepper

Steps:

  • Make the marinade: In a small bowl, combine garlic, zest, juice, chili powder, and red-pepper flakes.
  • Place the chicken in a large resealable plastic bag, and add the marinade. Seal the bag, and toss to coat the chicken. Transfer bag to refrigerator, and chill 10 to 15 minutes, or up to 24 hours.
  • Heat grill; when very hot, remove chicken from bag, and carefully place on hot grill. Cook about 5 minutes; discard bag and excess marinade. Turn chicken over, and continue cooking 4 to 5 minutes more. Season with salt and pepper.

1/4 cup freshly squeezed lemon juice
1 small shallot, chopped
1/4 cup pure olive oil
1/4 teaspoon coarsely ground fresh black pepper
4 boneless, skinless, chicken breasts, pounded thinly

1/2 pound arugula
2 ripe beefsteak tomatoes, diced
1 small red onion, peeled, halved and thinly sliced
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil, plus additional for garnish
Lemon halves, for garnish

Steps:

  • Whisk together lemon juice, shallot, olive oil and black pepper in a large baking dish. Add the chicken, turn to coat and marinate in the refrigerator for 30 minutes.
  • Preheat grill to high. Remove chicken from marinade, season with salt on both sides and grill for 2 to 3 minutes per side or until golden brown and just cooked through.

4 boneless, skinless chicken breast halves
Extra-virgin olive oil
Salt and freshly ground black pepper
1/4 teaspoon garlic powder
Grated zest and juice of 1/2 lemon
1/2 teaspoon grainy mustard
8 cups arugula or mixed greens
Shaved Pecorino Romano cheese

Steps:

  • Preheat an outdoor grill to high. (If you hold your hand about 3 inches from the grill grate, you should have to move it within 3 seconds.)
  • Arrange a chicken breast between two sheets of plastic wrap. Using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4 inch thick. Remove the plastic wrap and repeat with the remaining chicken breasts; put the paillards on a baking sheet and brush both sides of each piece lightly with oil. In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon pepper and the garlic powder and sprinkle it evenly over both sides of the chicken pieces.
  • Lightly oil the grill grate with an oil-soaked towel. Grill the chicken, turning once, until cooked through and grill marks appear, about 2 minutes per side. Transfer to a clean platter.
  • In a large bowl, whisk the lemon zest and juice, mustard and 2 tablespoons oil until combined; season with salt and pepper to taste. Add the arugula to the bowl and toss to evenly coat.

1/4 cup orange juice
1 tablespoon mild honey
1 teaspoon fresh lemon juice
1 (3-inch) cinnamon stick
1/4 teaspoon dried hot red pepper flakes

For paillards
1/2 teaspoon ground cumin
1/2 teaspoon paprika (not hot)
1/4 teaspoon black pepper
2 tablespoons olive oil
1 3/4 lb boneless chicken breast slices (1/4 inch thick; see cooks' note, below)
1 1/4 teaspoons salt

a well-seasoned large (2-burner) ridged grill pan

Steps:

  • Prepare grill pan and start sauce:
  • Heat grill pan over moderate heat until hot.
  • Meanwhile, simmer all sauce ingredients except butter in a 1-quart saucepan, uncovered, stirring occasionally, 2 minutes. Set aside while cooking chicken.
