SWEET & SOUR BACON GREEN BEANS
I don't recall where this recipe came from, but I've had it for many years. Great taste. I usually manage to have it half gone before it's time to serve. The beans can be left whole (for effect) or cut - it's your choice. Note that the marinating time is very important, and is included in the cooking time.

Steps:
- 1. Sauté onion and parsley in butter. Stir in flour and pear liquid(liquid the pears were in ). Cook until thick. In a small bowl combine remaining ingredients (except beans)and add to the onion mixture. Pour this mixture over the hot drained beans and sprinkle bacon pieces over and serve.
Tips:
- Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when bent. Avoid beans that are wilted, bruised, or have yellow or brown spots.
- Trim the green beans: Remove the ends of the green beans by snapping them off or cutting them with a knife. You can also remove the strings from the beans by pulling them off with your fingers.
- Blanch the green beans: Blanching the green beans helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
- Make the sour sauce: While the green beans are blanching, make the sour sauce. In a medium bowl, whisk together the vinegar, sugar, salt, and cornstarch. Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat to low and simmer for 1-2 minutes, or until the sauce has thickened.
- Combine the green beans and sour sauce: Drain the green beans and add them to the bowl with the sour sauce. Toss to coat the beans evenly.
- Serve the green beans: Serve the green beans warm or at room temperature. You can garnish the beans with chopped green onions, sesame seeds, or chili flakes.
Conclusion:
Sour green beans are a delicious and refreshing side dish that can be enjoyed all year round. They are easy to make and can be tailored to your own taste preferences. Whether you like your green beans sour, sweet, or spicy, there is a recipe out there for you. So next time you are looking for a healthy and flavorful side dish, give sour green beans a try.
