1 cup raw long grain rice (not minute)
4 green onions, thinly sliced
3 hard-boiled eggs, finely chopped
1 pint sour cream
salt and black pepper

Steps:

  • Cook rice according to package directions.
  • Let cool slightly, then add rest of ingredients.
  • Mix throughly and put in a loaf pan, lined with plastic wrap overlapping edges.
  • Refrigerate at least 4 hours or overnight.
  • Remove from loaf pan by pulling up on plastic wrap; invert on plate and remove wrap.

1/2 a red bell pepper, chopped
1 1/2 c. shredded medium or mild cheddar cheese
1 c. shredded Monterey Jack cheese
1/2 tsp. ground cumin
1/2 tsp. garlic salt
2 T. chopped fresh cilantro (optional)

Steps:

  • In a mixing bowl, combine cooked rice, sour cream, green chilies, chopped red bell pepper, ground cumin, garlic salt, shredded Monterey Jack cheese, and 1/2 cup of shredded cheddar cheese. Stir until well mixed.
