- Drain beans and save liquid.
- Brown onion in butter. Blend in flour. Add liquid from beans and cook until thick, stirring constantly.
- Add salt, pepper, vinegar, sugar and sour cream.
- Add beans and heat thoroughly. Serve immediately, garnished with chopped parsley.

Steps:
- Pre heat oven to 350.
- Saute' onions and mushrooms in butter.
- In a bowl combine beans, sour cream, onion soup mix, salt& pepper.
- Mix lightly.
- Fold in cheese.
- Pour into a greased 2 quart casserole.
- Mix melted butter with bread crumbs.
- Top the beans when mixed.
- Bake for 20-25, until bubbly.

SOUR CREAM GREEN BEANS

Steps:
- 1. Cut very tips off of fresh green beans. (**You can cut beans in half at this point if you wish; i prefer to leave them whole.) Cook in large pot of boiling, salted water until tender, about 15 minutes. Drain beans and return to pot.
- 2. Cut onion into thin slices. Saute onion in 1/2 stick butter (or margarine). Add onion and butter to pot with green beans. In same pot, combine sour cream, flour and seasonings; mix lightly.
- 3. Pour into greased casserole. Sprinkle with grated cheese. Melt remaining 1/2 stick butter, toss with crumbs. Pour over casserole.
- 4. Bake at 350, uncovered, for 25 minutes.

- 1. Sauté onion and parsley in butter. Stir in flour and pear liquid(liquid the pears were in ). Cook until thick. In a small bowl combine remaining ingredients (except beans)and add to the onion mixture. Pour this mixture over the hot drained beans and sprinkle bacon pieces over and serve.
Tips:
- For the best flavor, use fresh green beans. If using frozen green beans, thaw them completely before cooking.
- To blanch the green beans, bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, or until they are bright green and tender-crisp. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
- To make the sour cream sauce, whisk together the sour cream, mayonnaise, lemon juice, sugar, salt, and pepper in a medium bowl. Taste and adjust seasonings as desired.
