1 lb lean ground beef
1 can(s) 15 oz pinto beans (drained)
1 can(s) 10 oz enchilada sauce
1 c grated cheddar cheese
1-1/2 small finely chopped onion
1 c sour cream
1 can(s) 11 oz corn with red & green peppers
2 c crushed corn chips
1 can(s) 8 oz tomato sauce

Steps:

  • 1. Saute onion and set aside. Brown hamburger and drain. To hamburger add onion, enchilada sauce, tomato sauce, 1 cup of grated cheese, 1 cup of corn chips, corn and mix together and simmer for 10 min.
  • 2. Pour hamburger mixture into a large casserole dish; bake covered at 375 degrees for 30 min.
  • 3. Take out of oven and spread sour cream over the top and sprinkle with remaining grated cheese and remaining corn chips. Put back in oven uncovered for another 5 minutes.

5 slices white sandwich bread, or as needed
1 pound bulk pork sausage
12 large eggs
⅓ cup sour cream
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chilies

Steps:

  • Butter the bottom and sides of an 8 1/2x11-inch baking dish with butter.
  • Use remaining butter to coat 1 side of each bread slice. Place bread butter-side down in the prepared pan until entire bottom is covered in a single layer.

1 large onion, chopped
1 large green pepper, chopped
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies
2 teaspoons chili powder
1 teaspoon salt

CORN BREAD BISCUITS:
1 cup all-purpose flour
1 cup cornmeal

Steps:

  • Make the chili: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the onion, bell pepper and jalapenos and cook, stirring occasionally, until softened, about 5 minutes. Add the tomato paste, chipotle, chili powder, cumin, coriander and oregano. Continue cooking, stirring occasionally, until the vegetables are well coated, adding 1 to 2 tablespoons water if the mixture gets too dry, about 3 minutes.
