SOUR CREAM CHEESECAKE FIT FOR THE GODS

Sour Cream Cheesecake Fit for the Gods image

I swear this cheesecake recipe originated in the kitchens of Mount Olympus. The crust is perfect, the filling creamy and light, and the simple sour cream topping is fantastic. With a delicate hint of lemon (increase the amount of lemon extract if you prefer a stronger flavor) and a flawless appearance (no need to worry about cracks, since the topping will cover them), this cake is just right to finish out a special dinner. To increase the "wow factor," spoon fruit compote on top just before serving. This scrumptious dessert is also very easy to make and tastes just as good when made with low-fat and/or fat-free ingredients -- you've got to try it! Because of the long amount of time required to cool and chill the cake before serving, I'd recommend that you make this a day ahead of time. Enjoy!

Time 1h52m

Yield 12 servings

Number Of Ingredients 11

3 tablespoons unsalted butter, softened
3 tablespoons sugar
1 large egg yolk
1 cup all-purpose flour (spoon flour into dry-measure cup and level off)
1/2 teaspoon baking powder
1/8 teaspoon salt
1 pound cream cheese
1 cup sugar
One 16-ounce container sour cream
3 large eggs
2 teaspoons vanilla extract

Steps:

  • Position a rack in the middle of the oven and preheat to 350 degrees F. Butter the bottom of the springform pan and line with parchment or waxed paper. Set aside.
  • To make the base: Beat together the butter and sugar by hand until light and fluffy. Beat in the yolk until smooth. Combine the flour, baking powder, and salt. With a rubber spatula, gently fold into the butter mixture. The mixture will be crumbly.
  • Place the dough in the pan and use your hands to pat it down evenly and firmly over the bottom. Bake for about 25 minutes, until the crust is golden and baked through. Transfer to a rack and reduce the oven temperature to 325 degrees F.
  • To make the batter: In the bowl of a heavy-duty mixer fitted with the paddle attachment, beat the cream cheese on the lowest speed just until smooth, no more than 30 seconds. Stop the mixer and scrape down the bowl and beater. Add the sugar in a stream, mixing for no more than 30 seconds. Stop and scrape again. Add 1 cup of sour cream and mix only until it is absorbed, no more than 30 seconds. Repeat with the remaining sour cream. Add the eggs 1 at a time, mixing only until each is absorbed; stop and scrape after each addition. Beat in the vanilla extract.
  • Wrap heavy-duty aluminum foil around the bottom of the springform pan so it comes at least 1 inch up the sides. Pour the batter into the pan. Place the pan in a jellyroll pan or roasting pan and pour warm water into the pan to a depth of 1/2-inch.
  • Bake the cheesecake for about 55 minutes, or until it is lightly colored and firm except for the very center. Remove from the oven and lift the cheesecake out of the hot water. Remove the foil and let cool completely on a rack. Wrap the cheesecake and chill overnight.
  • To unmold the cheesecake, run a knife or thin spatula around the inside of the pan pressing the knife against the pan, not the cake. Unbuckle the pan side and lift off. Leave the cake on the base, or run a spatula under the cake base and slide the cake onto a platter.

SOUR CREAM CHEESECAKE WITH VANILLA BEAN

Sour Cream Cheesecake With Vanilla Bean image

This elegant cheesecake is based on Amanda Hesser's mother's simple recipe. The crust is made of Nabisco chocolate wafers and butter. The bottom layer is a fluffy pool of cream cheese, eggs and sugar. The top is a thin layer of sour cream and sugar. Her recipe called for vanilla extract, but this one uses the seeds of one whole vanilla bean, which has a way of elevating all the other subtle flavors - cinnamon, chocolate and the tang of the sour cream and cream cheese - in a magical way.

Categories     project, dessert

Time 1h10m

Yield 12 servings

Number Of Ingredients 8

18 Nabisco chocolate wafers, finely crushed
1/4 teaspoon cinnamon
1/4 cup butter, melted
1 pound cream cheese, room temperature
2 eggs at room temperature, lightly beaten
2/3 cup plus 3 tablespoons sugar
1 vanilla bean, split in half lengthwise and seeds scraped
1 1/2 cups sour cream

Steps:

  • In a bowl stir together crushed wafers and cinnamon with a fork. Pour in butter, and stir until mixture is moist. Press mixture into a 9-inch springform pan, forming a crust just over 1 inch high around the sides. You might think you need more wafers, but you don't. Press patiently until a tight, thin layer forms. Chill until needed.
  • Heat oven to 350 degrees with baking sheet on center rack. In an electric mixer, beat cream cheese until creamy and fluffy. Add eggs, 2/3 cup sugar and seeds from vanilla bean, and beat until very smooth. Scrape bowl with a spatula to break up lumps. Pour into crust, and place on baking sheet. Bake 25 minutes.
  • Meanwhile, blend sour cream with 3 tablespoons sugar. After 25 minutes, remove cake from oven, and let sit 5 minutes. Increase oven heat to 450 degrees. Gently spoon sour cream mixture on top, and spread evenly. Return cake to oven, and bake 7 minutes. Cool on a wire rack.

Tips:

  • Use high-quality ingredients: This means using real sour cream, cream cheese, and butter. Avoid using low-fat or non-fat products, as they will not give you the same rich and creamy flavor.
  • Make sure your cream cheese and butter are at room temperature: This will help them cream together smoothly and evenly. If your cream cheese is too cold, it will be difficult to mix and may cause the cheesecake to curdle.
  • Don't overbeat the batter: Overbeating the batter can cause the cheesecake to be dense and dry. Mix the ingredients just until they are combined.
  • Bake the cheesecake in a water bath: This will help to prevent the cheesecake from cracking and will give it a smooth and creamy texture.
  • Chill the cheesecake thoroughly before serving: This will help the cheesecake to set properly and will give it a more浓郁flavor.

Conclusion:

This sour cream cheesecake is a delicious and decadent dessert that is perfect for any occasion. With its creamy texture, tangy flavor, and graham cracker crust, this cheesecake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this sour cream cheesecake a try. You won't be disappointed!
