SOUR CREAM CHEESE CASSEROLE

Sour Cream Cheese Casserole image

This casserole combines the flavors of sour cream, cream cheese and creamy chicken and mushroom soups, all topped with buttery, round crackers. Super easy to make - not the prettiest looking dish, but tastes great and kids love it! My sister-in-law gave this to me a few years back.

BAKED CORN (LIKE A CORN CASSEROLE, BUT NO CHEESE OR SOUR CREAM)

Baked Corn (Like a Corn Casserole, but No Cheese or Sour Cream) image

This is an amazing side dish. I often whip this up when making food for church, a sick friend or a new mom. It's one of those easy, cheap and delicious meals. I have another corn casserole dish that I also love. But, this is one of the few that doesn't require cheese, cream cheese or sour cream. I use club crackers. But, I'm sure that you could also use Ritz. It's obviously not a diet food. Yum!

Time 20m

Yield 2 serving(s)

Number Of Ingredients 3

8 ounces bow tie pasta
1/2 pint cottage cheese
1/2 pint sour cream

Steps:

  • Thoroughly cook bow tie noodles as directed on package (past al-dente).
  • Add cottage cheese and sour cream, mixing thoroughly.

Tips:

  • Use fresh ingredients: Fresh sour cream, cream cheese, and vegetables will give your casserole the best flavor.
  • Don't overcook the casserole: The casserole should be cooked until the vegetables are tender and the cheese is melted and bubbly, but not overcooked. Otherwise, the casserole will become dry and tough.
  • Serve the casserole hot: The casserole is best served hot out of the oven. You can garnish it with fresh herbs, such as chives or parsley, for extra flavor.
  • Make-ahead tips: You can make the casserole ahead of time and refrigerate it for up to 24 hours before baking. When you're ready to bake it, simply take it out of the refrigerator and let it come to room temperature for 30 minutes before baking.
  • Freezing tips: You can also freeze the casserole for up to 2 months. To freeze, let the casserole cool completely, then wrap it tightly in plastic wrap and place it in a freezer-safe container. When you're ready to reheat it, thaw the casserole overnight in the refrigerator or at room temperature for several hours. Then, bake it in a preheated oven at 350 degrees Fahrenheit until heated through.
