Time 35m

Yield 6

Number Of Ingredients 8

5 tablespoons butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

SUSAN'S CREAM OF BROCCOLI SOUP

Susan's Cream of Broccoli Soup image

Another quest - how to stop using so much canned soup! Not only is it expensive, there's also the sodium to think about, and the quality of the ingredients, as well as the can itself and what it might be leeching into the product. I'll probably never totally give up canned soups because they are so convenient, but I've tried to...

2 Tbsp butter or olive oil
1/4 c sweet onion, chopped
1/2 c fresh mushrooms, diced
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp dried thyme (or use fresh - 1 1/2 tsp minced)
1/2 tsp freshly ground black pepper
1/4 c all purpose flour
1 c evaporated milk (may use non-fat if desired)
3 Tbsp dry sherry
1/2 c (or more as needed) chicken broth (or water from cooking broccoli)
1 c cooked chopped broccoli (may be fresh or frozen)
1/3 c light sour cream
1/2 c grated cheddar cheese (optional) plus more for topping, if desired

  • 2. Stir in mushrooms, onion powder, salt, thyme, and pepper. Cook, stirring often, until the mushroom juices are almost evaporated, 3-5 minutes.
  • 3. Sprinkle the flour over the mixture; stir to coat. Add milk and sherry and bring to a simmer, stirring often.
  • 4. Add the chicken broth or cooking liquid and the broccoli and return to a simmer. Cook, stirring, until heated through, about 1 minute. Add more broth if you like thinner soup.

Tips:

- **Choose the right broccoli.** For the best flavor, use fresh broccoli with tight, compact florets. Avoid broccoli that is starting to turn yellow or has brown spots. - **Don't overcook the broccoli.** Broccoli should be cooked until it is tender but still has a slight crunch. Overcooked broccoli will become mushy and lose its flavor. - **Use a good quality sour cream.** The sour cream is a key ingredient in this soup, so it's important to use a good quality brand. Look for sour cream that is thick and creamy, with a slightly tangy flavor. - **Season the soup to taste.** This soup is relatively simple, so it's important to season it well. Taste the soup and add more salt, pepper, or garlic powder as needed. - **Serve the soup with your favorite toppings.** This soup is delicious on its own, but it can also be served with a variety of toppings, such as croutons, shredded cheese, or crumbled bacon.

Conclusion:

Sour cream broccoli soup is a delicious and easy-to-make soup that is perfect for a quick and easy meal. With just a few simple ingredients, you can have a creamy and flavorful soup that the whole family will love. So next time you're looking for a quick and easy soup recipe, give this sour cream broccoli soup a try. You won't be disappointed!
