I love quiche,have not made this recipe, from Campbell soup cookbook.

4 eggs
1 can condensed soup
1/2 cup light cream
1 cup shredded cheese
meat
1/2 cup vegetable
one 9 inch unbaked piecrust

Steps:

  • 1. SOUP cheddar cheese cream of mushroom cream of onion cream of celery
  • 2. CHEESE sharp cheddar american monterey jack swiss
  • 3. MEAT 1/2 cup diced cooked ham 6 slices bacon, cooked, drained and crumbled 1/2 cup dicedcooked chicken 1/2 cup diced cooked turkey
  • 4. VEGETABLES drained, cooked chopped broccoli drained, cooked cut asparagus sliced mushrooms drained, cooked chopped spinach
  • 5. 1...In medium bowl, beat eggs until foamy. Gradually add SOUP and cream, mixing well. 2...Sprinkle CHEESE, MEAT and VEGETABLE evenly over piecrust. Pour soup mixture over all. 3...Bake at 350 for 50 minutes or until center is set. Let stand 10 minutes before serving.
  • 6. PIE CRUST In medium bowl, stir together 1 cup all-purpose flour and 1/2 tsp salt. With pastry blender, cut in 1/3 shortening until mixcture resembles coarse crumbs. Add 2 to 3 tbs cold water, a tbs at a time, mixing lightly with fork until holds together. Form into ball. Roll to fit pie plate. Flute edges. Make ingredient choices from above.

4 eggs
¾ cup biscuit baking mix
¼ cup butter, softened
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen broccoli, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.
  • In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.

This is one of my favorites! It freezes really well. Just cut them into desired squares and when your ready, just take them out and microwave them for a couple of minutes.

2 cups water
1 teaspoon salt
4 cups finely chopped cauliflower
4 cups finely chopped broccoli
1 finely chopped green pepper
6 beaten eggs
2 cups milk
1 1/2 cups buttermilk pancake mix
1 teaspoon salt
1/2 teaspoon pepper
2 cups grated cheddar cheese

Steps:

  • Boil water and salt and cook the veggies until tender.
  • Grease a 9x13 glass pan (or spray with non stick cooking spray).
  • Drain veggies and put into pan.
  • Beat together the eggs, milk, pancake mix, salt and pepper.
  • Pour over veggies and sprinkle the cheese on top.
  • Bake at 350°F for about 50 minutes.
  • I also had small pieces of cooked ham or bacon once in a while, just for a change.

4 large eggs
3/4 cup 1% low-fat milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 dash hot sauce
1 dash Dijon mustard
2 tablespoons parmesan cheese, grated
1 1/2 cups ham, chopped (great use for leftover ham!)
1 1/2 cups sharp cheddar cheese, shredded
3 tablespoons shallots, minced and sauteed until tender
1/4 cup tomatoes, seeded and diced
9 inches deep dish pie shells, thawed

Steps:

  • in a bowl mix the eggs, milk, parmesan cheese and the seasonings. Beat with a wire whisk until well combined.
  • add in the cheddar, ham, cooked shallots, and the tomato. Mix with a spoon.
  • pour into the pie crust and bake at 350 degrees for 45 minutes, (I place it on a cookie sheet).

Tips:

  • Use a good quality pie crust. You can either make your own or buy a pre-made one. If you are using a pre-made crust, be sure to thaw it completely before using.
