  • Add the plantains to the rest of the ingredients.
  • Add as much tomato sauce as you like.its up to you. I add the whole can.
  • Bring it all to a boil, then simmer on med low heat 1-1 1/2 hours. Season with more adobo ( or salt) to your taste, if needed.
  • Serve with rice!
  • SOFRITO.
  • 1 white onion.
  • 1 green bell pepper.
  • 1 bunch of cilantro.
  • 3 cloves of garlic.
  • 2 tbs. of oregano.
  • Chop and puree all ingredients. Freeze the rest to use in other recipes (it's the best magic seasoning!).

Tips:

  • Choose ripe plantains: Look for plantains that are mostly black with a few hints of yellow. Avoid plantains that are completely green or have large green patches, as they will be less flavorful and more difficult to cook.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the soup from burning.
  • Don't overcrowd the pot: When adding the plantains to the pot, don't overcrowd it. The plantains should be able to cook evenly without sticking together.
  • Cook the plantains until they are tender: The plantains should be cooked until they are tender and can be easily pierced with a fork. This will take about 15-20 minutes.
  • Use a blender or food processor: Once the plantains are cooked, you can use a blender or food processor to puree them. If you want a smooth soup, you can strain it through a fine-mesh sieve.
  • Add your desired toppings: Once the soup is pureed, you can add your desired toppings. Some popular toppings include cilantro, avocado, sour cream, and crumbled cheese.
