1 packet of sazon or 1 teaspoon of turmeric for color
1 teaspoon of ground cumin
1/4 cup of sofrito
4 ounces of tomato sauce
2 bay leaves
1 whole red pepper (chopped)
2 carrots (peeled and chopped)
2 celery stalks (peeled and chopped)
8 cups of chicken broth (or water and chicken bullion)
1/4 cup of fresh chopped cilantro (optional)
4 oz of angel hair spaghetti (cut in half)
fresh lime juice for serving

Steps:

  • In a large bowl season chicken with garlic powder, salt, pepper, and 2 teaspoons of oregano.

4 Roma Tomatoes
1/4 White Onion
3 Cloves Garlic
3 Peppercorns
1 Jalapeno (Optional)
1 Tsp Oregano
1/4 bunch Fresh Parsley
1/2 Tsp Ground Cumin
7 oz Fideo pasta (or other thin pasta such as angel hair)
1 Potato (Cut into cubes)
1 Chicken Breast (Cooked and shredded)
Salt (to taste)
1 1/2 Tbsp olive oil
4 Cups Chicken Broth

Steps:

  • Roast the tomatoes, onion, garlic, and jalapeno in a frying pan until browned.
  • Saute the fideo pasta with 1 1/2 tablespoons of oil until lightly browned (5-7 minutes), moving constantly
  • Add the roasted tomato, onion, garlic and jalapenos from above to a blender along with the peppercorn, salt, oregano and cumin and blend until smooth. Strain the resulting liquid and add to the pan with the fideo pasta and stir constantly for about 3 minutes.
  • Add the potatoes and add 4 cups of chicken broth. Bring to a boil and cook for about 10 minutes.
  • Add the shredded chicken and the parsley. Let boil for another 10 minutes.

1/2 onion
1/3 cup sofrito
1/4 cup cilantro
3 garlic cloves
4 oz tomato sauce
1 pkt bullion
1/2 cup pitted green olives
1 jar pimentos
2 potatoes
6 oz spaghetti
1 bay leaf
1 sazon
1/4 teaspoon ground oregano
1/2 teaspoon ground black pepper
salt (to taste)
8 cups water

Steps:

  • In a large pot over medium high heat, cook salami for 5-6 minutes, stirring often.
  • Add in onions and sofrito, cook an additional minute or two.

1/2 teaspoon red-pepper flakes
1 tablespoon ground cumin
1 tablespoon coarse kosher salt
1/4 cup neutral cooking oil, such as grapeseed
8 ounces 1-inch fideo (3 cups)
2 celery stalks, whole
1 carrot, whole
1 dried bay leaf

Steps:

  • Add the garlic, tomatoes, red-pepper flakes, cumin and salt to a blender, and blend until smooth. Set aside.

1 Small salchichón (hard salami or Genoa salami), sliced
1 potato, cubed
6 cups water or chicken stock
1 tbsp olive oil
1/2 pack of angel hair spaghetti (broken in half)
1 tbsp chopped parsley
1/2 tsp mashed garlic or garlic powder
1/2 tsp onion powder
1/4 cup chopped celery
2 envelopes Sazón
2 tbsp sofrito
1 bunch cilantro, chopped
1/4 cup tomato sauce
Salt and adobo to taste

Steps:

  • 1. In a soup pot or large caldero, heat the oil; add the salchichón, garlic, salt or adobo, onion, cilantro, chopped parsley and stir fry a little on high. 2. 1 small onion, chopped
1 large clove garlic, coarsely chopped
