SOOR VINDALOO (CURRIED PORK)

Soor Vindaloo (curried Pork) image

This recipe came from another site and varies from the other Pork Vindaloo recipes already posted here on 'Zaar, so I'm including it. It is spicy, flavorful, uses a relatively inexpensive cut of meat and is one of our favorites. It isn't any harder to make than a pot of chili. I serve over rice with a plain steamed vegetable on the side. Note to those who have never made a curry before, or have only used pre-packaged curry powder: don't be intimidated by the long list of "exotic" spices ! Once you've bought them for one recipe, you'll be using them over and over again for other curries. Enjoy !

Time 1h35m

Yield 4-6 serving(s)

Number Of Ingredients 18

6 cloves garlic, chopped and divided
1 inch fresh ginger, peeled and finely chopped, divided
4 red chilies, coarsely chopped and seeded (or not depending on your heat tolerance)
1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
4 tablespoons white wine vinegar, divided
3 tablespoons olive oil
2 onions, finely chopped
1/2 lb tomatoes, chopped
2 lbs pork shoulder, trimmed of fat and cubed
1/2 teaspoon salt
2 1/2 cups boiling water
5 curry leaves, chopped
6 whole cloves
1 cinnamon stick
1 teaspoon sugar

Steps:

  • In a blender or electric chopper, add 4 of the chopped garlic cloves, half the ginger, the red chilis, mustard seeds, fenugreek seeds, turmeric, cumin and half the vinegar.
  • Blend/chop until a homogeneous paste is formed.
  • In a large pot or dutch oven, heat the olive oil and fry the onions until golden.
  • Add the spice paste and saute gently for 15 minutes.
  • Add the tomatoes and continue to cook, breaking them up in the pot with the back of a wooden spoon.
  • When the tomatoes have begun to incorporate with the rest of the mixture (only a few minutes) add the pork and stir and cook until all the pieces have browned and are well coated with the spice mixture.
  • This should take 5 to 10 minutes.
  • Add the salt and pour in the boiling water.
  • Simmer, covered for 40 minutes to one hour until the pork is tender.
  • I usually remove the cover for the last 10 minutes and increase the heat slightly to reduce the liquids.
  • You may also add 1 TBS cornstarch at this point if you want a sauce with more body.
  • Add the remaining chopped garlic and ginger, along with the curry leaves, cloves, and cinnamon stick.
  • Cook a further 5 minutes.
  • Add the sugar and remaining vinegar, and more salt if desired.
  • Remove the cinnamon stick before serving (and the cloves if you can fish them out, or caution your diners that they still remain!).

PORK VINDALOO

Pork vindaloo image

Marinate pork with Indian flavours for this traditionally very spicy, aromatic curry - decrease the number of dried chillies for less heat

Provided by Good Food team

Categories     Dinner, Main course

Time 1h10m

Number Of Ingredients 20

1kg pork shoulder , trimmed and cut into bite-sized cubes
3 tbsp vegetable oil
2 large onions , finely chopped
1 tbsp mild chilli powder
250ml chicken stock
handful coriander leaves
undefined
cooked basmati rice , to serve
naan , to serve
6 green cardamom pods
½ tsp black peppercorns
125ml red wine vinegar
1 heaped tbsp finely grated ginger
4 large garlic cloves , finely grated
1 tsp golden caster sugar
8 small dried chillies
pinch of ground cloves
2 tsp ground coriander
1 tsp ground cumin
¼ tsp turmeric

Steps:

  • To make the marinade, remove the seeds from the cardamom pods and grind with the peppercorns using a pestle and mortar. Mix with the rest of the marinade ingredients, then pour over the pork. Mix everything together well, then cover and leave to marinate overnight or for at least 8 hrs.
  • Heat the oil in a large pan over a medium heat and cook the onions for about 5 mins until starting to soften. Add the chilli powder to the pan and cook for 1 min. Using a slotted spoon, remove the pork from the marinade and add to the pan. Turn up the heat a little and cook for about 5 mins, stirring all the time. Add the leftover marinade to the pan with the stock. Bring to the boil, then turn down to a simmer and cook for 40-45 mins until the pork is soft and the sauce thickened - it should be thick rather than saucy. Pick out the dried chillies, if you like, season, scatter with the coriander leaves, and serve with steamed rice and naan.

SLOW-COOKER GOAN PORK VINDALOO

Slow-Cooker Goan Pork Vindaloo image

In 1510, when the Portuguese invaded Goa, a region on the west coast of India, they brought with them a dish called carne de vinha d'alho, a sailors' preserve of pork stored in wine vinegar and garlic. Goan cooks reimagined the dish with local ingredients, like cinnamon, black pepper and coconut palm vinegar, and it came to be called vindaloo. Chiles are always included, but the dish is not traditionally superhot. In this version, the pork benefits from slow cooking in the vinegar and spices, making marination unnecessary. The blender does double duty: It purées the aromatics and grinds the whole spices at the same time.

Time 5h20m

Yield 4 to 6 servings

Number Of Ingredients 17

1 large yellow or red onion, roughly chopped
10 garlic cloves, peeled
2 tablespoons finely chopped ginger (about a 2-inch length of peeled ginger)
1 tablespoon black or brown mustard seeds
5 whole cloves
1/2 teaspoon black peppercorns
Kosher salt
5 green cardamom pods or 1/4 teaspoon cardamom seeds
1/2 cup apple cider vinegar or coconut vinegar
1 (3-inch) cinnamon stick
2 packed tablespoons grated jaggery or light brown sugar, plus more to taste (see Tip)
2 teaspoons ground cumin
2 teaspoons ground turmeric
1 tablespoon kashmiri chile powder (see Tip)
1/4 teaspoon ground cayenne, or to taste (optional)
3 pounds boneless, skinless pork shoulder, cut into 2- to 3-inch chunks
Cooked basmati rice, for serving

Steps:

  • Combine the onion, garlic, ginger, mustard seeds, cloves, peppercorns and 2 1/2 teaspoons salt in a blender. Using the flat side of a chef's knife, firmly press the cardamom pods so that they crack open. Put the seeds from each pod in the blender and discard the pods. (This yields about a heaping 1/4 teaspoon of seeds.) Pour the vinegar into the blender. Blend, first on low until everything is combined, then on high, until the mixture is fully puréed and the whole spices are crushed, 30 seconds to 3 minutes depending on your blender. (You will see flecks of spices, but everything should be at least coarsely ground.)
  • Pour the puréed mixture into a 6- to 8-quart slow cooker. Stir in the cinnamon stick, jaggery, cumin, turmeric, chile powder and cayenne (if using). Add the pork and stir to evenly combine. Cover and cook on high until the flavors have blended, the oniony taste is no longer sharp, and the pork is very tender, about 5 hours.
  • Remove and discard the cinnamon stick. Taste and add more salt or sugar if you like, before serving with warmed rice. The sauce will be rich and a little soupy, great for spooning over rice. If you prefer a thicker sauce, remove the pork from the slow cooker with a slotted spoon and put it in a serving dish. Pour the sauce into a saucepan and simmer until the sauce thickens, about 10 minutes. Pour the reduced sauce over the pork and serve with warm rice.

CURRIED PORK WITH VINDALOO RECIPE - (5/5)

Curried Pork with Vindaloo Recipe - (5/5) image

Provided by jobustitch

Number Of Ingredients 9

1 lb boneless pork tenderloin cut into 1/2" to 1" cubes
2-3 Tb. VINDALOO SEASONING
1/4 cup malt or cidar vinegar
1 tsp. kosher flake salt
2 TB. canola oil or ghee
1 onion, chopped
4 cloves fresh garlic or 1 tsp. MINCED GARLIC
2/3 cup unsweetened coconut milk (a light one with less fat works.
sour cream (optional)

Steps:

  • Mix together the vindaloo, malt vinegar and salt into a paste and set aside. In a large pot, heat the oil or ghee over medium-high heat. Add the onions and garlic (if using fresh garlic) and lightly brown. Add the vindaloo paste and stir for about 3-5 minutes. A lot of the vinegar will evaoporate, thickening and stiffening the paste, which flavors the oil. Add the meat, stirring to cover it with the paste and searing it for about 2 minutes. Add the coconut milk and garlic (if using dried garlic) and stir to deglaze the pot. Reduce the heat to a low simmer and stir occasionally until the meat is cooked and tender, about 7-10 minutes. Serve over jasmine or brown rice. Cut heat with sour cream, if necessary

Tips:

  • To make the pork more tender, marinate it in a mixture of vinegar, garlic, ginger, and spices for at least 30 minutes before cooking.
  • Use a heavy-bottomed pot or Dutch oven to cook the vindaloo. This will help to evenly distribute the heat and prevent the pork from sticking.
  • Add the potatoes and carrots to the pot along with the pork. This will help to create a more flavorful and well-rounded dish.
  • Be sure to use a good quality curry paste. This will make a big difference in the flavor of the vindaloo.
  • If you want a spicier vindaloo, add more chili peppers or cayenne pepper to taste.
  • Serve the vindaloo with rice or naan bread.

Conclusion:

Soor Vindaloo is a delicious and flavorful pork curry that is sure to please everyone at your table. It is a relatively easy dish to make, and it can be tailored to your own personal taste preferences. Whether you like your vindaloo mild or spicy, this recipe is sure to satisfy.
