Delishious recipe from The Sonoma Diet. I quadrupled the recipe since I usually make enough for 4 wraps and keep in fridge 3 days, making wraps as needed. If making only one wrap, divide the ingredients below by 1/4.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

4 (6 -8 inch) fat free tortillas
2 cups fresh mushrooms, sliced
1 medium onion, cut lengthwise in half, then cut crosswise into thin slices
1 (15 ounce) can black beans, rinsed and drained
4 cups fresh spinach leaves
1/2 cup reduced-fat cheddar cheese, shredded (2 ounces)

Steps:

  • Heat tortillas as directed on package. While tortillas are heating, spray 10-inch nonstick skillet with cooking spray and heat over medium heat.
  • Cook mushrooms and onion in skillet about 5 minutes, stirring frequently, until onion is crisp-tender. Stir in beans and heat through. Stir in spinach. The heat will wilt the spinach leaves. Remove from heat.
  • Divide bean mixture among tortillas. Sprinkle with cheese. Fold one end of each tortilla up about 1 inch over filling and fold right and left sides over folded end, overlapping. Fold remaining end down.

Tips:

  • Mise en Place: Before you start cooking, gather all the ingredients and equipment you'll need. This will help you stay organized and avoid scrambling later on.
  • Use Fresh Ingredients: The fresher the ingredients, the better the wrap will taste. If possible, use organic or locally-sourced ingredients.
  • Don't Overcook the Chicken: Chicken is a lean meat, so it's important to cook it carefully to avoid drying it out. Cook the chicken until it reaches an internal temperature of 165°F (74°C).
  • Use a Variety of Vegetables: The more vegetables you use, the more nutritious and flavorful the wrap will be. Try using a mix of leafy greens, crunchy vegetables, and sweet vegetables.
  • Don't Skimp on the Sauce: The sauce is what brings all the flavors of the wrap together. Be generous with the sauce and make sure to spread it evenly over the wrap.

Conclusion:

The Sonoma Diet Chicken and Black Bean Wrap is a delicious, healthy, and easy-to-make meal that's perfect for lunch or dinner. It's packed with protein, fiber, and vitamins, and it's low in calories and fat. Plus, it's a great way to use up leftover chicken.
