Time 1h35m

Yield 1 3/4 pounds dough

Number Of Ingredients 9

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

Categories     Yeast Bread

Time 2h30m

Yield 16

Number Of Ingredients 10

2 (.25 ounce) packages active dry yeast
2 ½ cups warm water (110 degrees F/45 degrees C)
1 (18.25 ounce) package yellow cake mix
4 cups all-purpose flour
4 tablespoons margarine, melted
2 tablespoons white sugar
2 teaspoons ground cinnamon
4 tablespoons margarine
4 tablespoons light corn syrup
4 tablespoons brown sugar

Steps:

  • Dissolve yeast in warm water and let stand until creamy, about ten minutes. In a large bowl, combine the cake mix and flour. Slowly add the yeast and water mixture and stir until smooth. Cover the bowl and let dough rise in a warm place until doubled in volume, about 1 hour.
  • Grease a 10x15 inch baking pan with high sides, or two 9x13 inch pans. With a spatula, scoop the dough out onto a heavily floured surface. Dust the top and roll or pat the dough into a large rectangle, about 12x24 inches. Brush dough with the melted butter or margarine. Combine sugar and cinnamon in a small bowl and sprinkle over the dough. Roll up dough jelly roll fashion and seal edge with a little water. Cut the roll into 1 1/2 to 2 inch slices. Place snugly into the prepared pan. Let rise in a warm place for about 1/2 hour or until doubled.
  • Preheat oven to 350 degrees F (175 degrees C)
  • While rolls are rising, combine butter or margarine, corn syrup and brown sugar in a heavy saucepan. Cook over low heat, stirring occasionally, until smooth. Remove from heat. When rolls have risen, pour the syrup over the tops of the rolls, letting it dribble down into the pan. Sprinkle rolls with pecans and bake at 350 degrees F (175 degree C) for 25 minutes or until golden brown.

Tips:

  • Activate the yeast properly: Active dry yeast should be proofed in warm water with a little sugar before being added to the dough. This allows the yeast to become active and start feeding on the sugar, which produces carbon dioxide gas, resulting in a light and fluffy dough.
  • Use fresh milk: Fresh milk produces a richer flavor and texture in the sweet rolls compared to powdered or long-life milk.
  • Don't over-knead the dough: Over-kneading the dough can result in tough and dense rolls. Knead the dough just until it comes together and forms a smooth ball.
  • Let the dough rise in a warm place: The ideal temperature for rising the dough is between 75-80°F (24-27°C). A warm environment allows the yeast to work more effectively, resulting in a faster rise.
  • Bake the sweet rolls until they are golden brown: To ensure that the sweet rolls are cooked through, bake them until they are golden brown on top. This indicates that the rolls have reached an internal temperature of at least 190°F (88°C).

Conclusion:

These sweet rolls are a delicious and versatile treat that can be enjoyed for breakfast, brunch, or dessert. With their soft and fluffy texture, sweet and cinnamony filling, and creamy glaze, these rolls are sure to be a hit with everyone who tries them. Whether you're a seasoned baker or just starting out, this recipe provides clear and detailed instructions to guide you through the process of making these delectable sweet rolls.
