Somen noodle salad is a refreshing and flavorful Japanese dish perfect for a light lunch or dinner. Made with thin and delicate somen noodles, this salad is tossed in a light and tangy sesame dressing and topped with a variety of fresh vegetables, herbs, and proteins. The result is a delicious and healthy meal that is easy to make and customizable to your liking.

This recipe includes three variations of the salad:

Somen salad is extra refreshing on warm days. It's a chilled noodle dish with toppings (like fish cake, cucumbers, carrots, egg), and a flavorful sauce poured all over the noodles. Great to make ahead and serve chilled.

Time 15m

Number Of Ingredients 12

2 bundles (3-4 ounces each) dried somen noodles
3 ounces kamaboko, thinly sliced
1 small cucumber, julienned
1 small carrot, julienned
2 eggs, scrambled and thinly sliced
2 stalks green onions, chopped
1/2 cup chicken broth
1 tablespoon sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sesame seeds

Steps:

  • First step is to prepare all the toppings. Thinly slice the kamaboko (or can use char siu, ham, or Spam). Julienne the cucumber and carrot. Chop the green onions. Scramble the eggs, let cool, and then thinly slice.
  • Second step is to prepare the sauce. Put the chicken broth, sugar, rice vinegar, soy sauce, and sesame oil together in a small saucepan. Bring to a boil, stir to dissolve the sugar. Pour in a small bowl and set aside.
  • Now cook the somen noodles. Bring water to a boil. Slice in the two bundles of dried somen noodles and cook for 3 minutes. Drain immediately and rinse with cold water (this stops the somen from cooking and cools the noodles).
  • Then it is time to assemble! Divide the somen noodles between two bowls and top with the kamaboko, cucumber, carrots, green onions, and egg. Use as much or as little of the toppings as you prefer. Sprinkle sesame seeds on top.
  • Pour the sauce all over the noodles/toppings. Mix with chopsticks and eat. Enjoy ^_^

SESAME NOODLE SALAD

Sesame Noodle Salad image

This amazing salad recipe was given to me by a friend who used to know someone at the now closed Larry's Markets in the Seattle area. I've added to the recipe a little -- so it's not exactly the same... but better! I take this to every picnic and everyone loves it! May also add diced chicken for a variation.

1/2 cup low-sodium soy sauce
2 tablespoons toasted sesame oil
2 tablespoons distilled white vinegar
2 teaspoons grated peeled ginger
1 teaspoon grated garlic
1 pound angel hair pasta, noodles broken into thirds
2 tablespoons safflower or canola oil
1 small yellow onion, halved and thinly sliced
3 red or yellow medium bell peppers, cored, seeded and sliced lengthwise 1/8-inch thick

Toasted white sesame seeds, for garnish (optional)

Steps:

  • Bring a pot of water to a boil, and season generously with salt.

Stir to deglaze the pan and lift the browned bits on the bottom of the skillet, then add vegetable mixture (with sauce) and scallions to pasta and toss until well combined (add more pasta water if thinner sauce is desired). Season with salt and pepper.
  • Serve warm or at room temperature. Garnish with scallions and sesame seeds, if using.

SOMEN NOODLE SALAD WITH GINGER-CILANTRO DRESSING

Somen Noodle Salad With Ginger-Cilantro Dressing image

A copycat recipe of a Trader Joe's pre-made salad I have tried to duplicate. All ingredient amounts are estimated. Best results when salad is allowed to marinate. Feel free, as I have to play around with the ingredients. For a vegan version, substitute agave nectar for the honey.

Tips:

  • For the best results, use fresh somen noodles. If you can't find somen noodles, you can substitute another type of thin, white noodle, such as angel hair pasta or rice vermicelli.
  • To make the sesame dressing, use a high-quality sesame oil. This will give the dressing a rich, nutty flavor.
  • If you don't have mirin, you can substitute sake or dry white wine.
  • If you don't have rice vinegar, you can substitute white vinegar or apple cider vinegar.
  • Be sure to chill the salad for at least 30 minutes before serving. This will help the flavors to meld and the noodles to firm up.
  • Garnish the salad with fresh herbs, such as cilantro, basil, or mint. This will add a pop of color and freshness.

Conclusion:

This somen noodle salad is a refreshing and flavorful dish that is perfect for a summer meal. The light and tangy sesame dressing pairs perfectly with the tender somen noodles and crisp vegetables. This salad is also very easy to make, and it can be tailored to your own liking. For example, you can add more or less vegetables, or you can substitute different types of vegetables. You can also adjust the amount of dressing to your liking.
