Tips:

  • Choose fresh mahi-mahi: Look for fish with bright, clear eyes, firm flesh, and no fishy odor.
  • Cook the fish gently: Mahi-mahi is a delicate fish, so it's important to avoid overcooking it. Cook it over medium heat until it is just cooked through, or about 4-5 minutes per side.
  • Make sure the tacos are warm: Warm tortillas will help to keep the fish tacos warm and prevent them from becoming soggy.
  • Load up on toppings: The toppings are what really make fish tacos special. Be generous with the toppings, such as shredded cabbage, salsa, guacamole, and sour cream.
  • Serve with a wedge of lime: A squeeze of lime juice will brighten up the flavors of the fish tacos and add a refreshing touch.

Conclusion:

Soft Mahi-Mahi Tacos with Ginger-Lime Dressing are a delicious and easy-to-make meal that is perfect for a weeknight dinner or a casual party. The fish is tender and flaky, the ginger-lime dressing is refreshing and flavorful, and the toppings add a variety of textures and flavors. These tacos are sure to be a hit with everyone who tries them.
