3 ounces soba noodles
4 ounces extra-firm tofu, drained, patted dry, and cut into small cubes
Salt
1 stalk broccoli, cut into small florets, stems thinly sliced
2 ounces sugar snap peas
1 tablespoon reduced-fat smooth peanut butter
1 tablespoon rice vinegar
1 tablespoon reduced-sodium soy sauce
Pinch of red pepper flakes, if desired
2 cloves garlic, minced

Steps:

  • Cook the noodles according to the package directions. Drain and rinse well under cold water to prevent sticking.

  • Coat the skillet again with cooking spray; place over medium-high heat. Add the broccoli, peas, and a splash of water. Cover and cook for 5 minutes, until the vegetables are crisp-tender.

2 tablespoons olive oil
1 tablespoon sesame oil
5 cloves garlic, minced
1 cup sliced cremini mushrooms
2 medium carrots, julienned
1 medium red bell pepper, seeded and chopped
2 tablespoons tamari
1 (10.5 ounce) package dried soba noodles
2 ¼ cups water, or as needed
1 green onion, finely chopped

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. When Instant Pot® displays hot, add olive oil and sesame oil. Tips:

  • Prep your ingredients: Before you start cooking, wash and chop all your vegetables, and measure out your ingredients. This will make the stir-fry process much quicker and easier.
  • Use high heat: A hot wok or skillet is essential for a good stir-fry. This will help to sear the vegetables and noodles, and prevent them from becoming soggy.
  • Stir constantly: Stirring constantly will help to distribute the heat evenly and prevent the ingredients from sticking to the pan.
  • Don't overcrowd the pan: If you overcrowd the pan, the ingredients will not cook evenly. Cook the ingredients in batches if necessary.
  • Add the sauce at the end: Adding the sauce at the end will help to prevent the noodles and vegetables from becoming overcooked.
  • Serve immediately: Stir-fries are best served immediately, while they are still hot and fresh.

Conclusion:

Soba noodle stir-fry is a quick, easy, and delicious meal that is perfect for a weeknight dinner. With a few simple ingredients and a little bit of prep, you can have a flavorful and satisfying meal on the table in under 30 minutes.
