1 lb pizza dough (or premade large pizza crust) 1 cup refried beans 4 ounces cooked chicken meat, chopped with no bones or skin 6-8 ounces Colby-Jack cheese blend, shredded (or more, if you wish!)1 Roma tomato, sliced (and each slice cut in half, if desired) Optional garnish: Cilantro leaves, with stems removed

Steps:

  • If using pizza dough, press pizza dough out on a greased 14″ round pizza pan (or another suitable baking sheet). If using premade pizza crust, place crust on baking sheet.
  • Spread refried beans on pizza dough/crust, almost to edge but leaving a 1/2-1″ edge uncovered, all the way around. Top evenly with shredded cheese. Top cheese with cooked chicken and tomato slices.
  • Bake in a 425 degree F oven for 12-15 minutes or until cheese is melted and beginning to brown and crust is golden. Remove from oven and sprinkle with cilantro leaves. Cut into slices and serve.

1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.

1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.

10 (6-inch) Old El Paso™ flour tortillas
1 (16-ounce) can black bean refried beans
1 teaspoon taco seasoning
1/2 teaspoon kosher salt
1 cup salsa, more if needed
2 cups shredded cheese
1 1/2 cup cooked meat (I used shredded rotisserie chicken)
Optional toppings: tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro

Steps:

  • Pre-heat the oven to 400°F. Line a baking sheet with foil or use a pizza pan. Place the tortillas on the pan and warm them in the oven for 3 minutes.
  • While the tortillas are cooking, heat the beans in a small sauce pan over medium-low heat for 2 to 3 minutes. Stir in 3 Tablespoons of salsa, taco seasoning and salt. Add more salt and pepper to taste.
  • Remove tortillas from the oven and spread the beans onto the top side of 5 tortillas. Sprinkle with cheese, add meat if desired and then top with another tortilla. Spread salsa on top of the tortilla and then add cheese. Bake for 5 to 7 minutes, or until the cheese is melted and bubbly.

2 garlic cloves, minced finely
1 lb ground beef (pref. gorund sirloin)
1 (14 ounce) can diced tomatoes, drained
1 (14 ounce) can dark red kidney beans, drained
1 (8 ounce) packet taco seasoning, any brand
8 large tortillas
2 cups of shredded Mexican blend cheese
sliced black olives (to garnish) (optional)
chopped cilantro (to garnish) (optional)
olive oil
salt & pepper, for taste

Steps:

  • Coat bottom of large skillet lightly with olive oil.
  • Saute garlic on medium heat until light brown.
  • Saute meat, adding taco seasoning once meat is broken up and cooking.
  • Once meat is cooked, ad drained beans and tomatoes. Cook mixture till vegetables are cooked through.
  • Arrange tortillas on a round, pizza style baking sheet, overlapping each tortilla until the whole sheet is covered. Bake on 350 degrees for 5 minutes.
  • Remove from oven, top with chili meat and then cover with cheese (and olives if desired) and return to a 350 degree oven for 5-10 minutes, or until the cheese is melted.
  • Remove from oven, and let stand for 5 minutes so the cheese doesn't fall apart when cut.
