SNOW PEAS AND RICE

Snow Peas and Rice image

This recipe is a good source of fiber.

Provided by Jason Koch

Categories     Vegetables

Time 10m

Number Of Ingredients 5

3 c trimmed snow peas(about 12 oz)
1 pkg microwavable brown rice(1.5 cups cooked)
2 tsp sesame oil
salt
pepper

Steps:

  • 1. Place snow peas in a microwave-safe bowl; microwave on high 2 minutes; set aside. Microwave brown rice according to package instructions. Measure 1.5 cups of the rice into the bowl with the peas. (Reserve the rest for another use.) Add sesame oil and salt and pepper to taste to the bowl; stir with a fork to mix well.

Tips:

  • Choose the freshest snow peas you can find. Look for pods that are bright green and crisp, with no brown spots or wilting.
  • Wash the snow peas thoroughly before cooking. Remove the strings from the sides of the pods, if desired.
  • Blanch the snow peas in boiling water for 1-2 minutes, or until they are bright green and tender-crisp. This will help them retain their color and flavor.
  • Stir-fry the snow peas in a hot wok or skillet with a little oil until they are heated through. Add other vegetables, such as carrots, broccoli, or bell peppers, if desired.
  • Season the snow peas with salt, pepper, and your favorite Asian-inspired sauce. Try a simple soy sauce and sesame oil dressing, or a more complex sauce made with ginger, garlic, and chili peppers.
  • Serve the snow peas immediately, while they are still hot and crisp. They can be served as a side dish or main course.

Conclusion:

Snow peas are a delicious and versatile vegetable that can be used in a variety of dishes. They are a good source of vitamins and minerals, and they are also low in calories and fat. With their bright green color and crisp texture, snow peas add a touch of freshness and flavor to any meal.
