1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

4 Eggs
1 ltr liquid milk
½ tinned condensed milk
1 tablespoon cornflour
4-5 drops vanilla essence
2 tablespoon sugar
6 cherry (for decoration optional)

Steps:

  • Separate the egg yolk and keep the white portion. Make sure no part of egg skin or yolk remains. The yolk will not allow you to make good foam. It is better to use an egg separator. Take a dry bowl and add vanilla essence and beat the white portion of egg in the bowl using an egg beater. Beat until the thick foam is created, and it does not fall even you upside down the bowl.
  • Boil the liquid milk in a widespread dish. Put a small portion of the thickened foam over the milk, each of one tbsp size. Use a tablespoon or round-shaped spoon or you can use a measuring spoon. So that it will look like a ball.
  • Cook for one minute. Turn the floating pieces of egg foam to cook on both sides. The color will turn to light yellow. Then take the pieces of foam in a wide serving dish. Take out the foam pieces after one minute. Boiling for a longer time, the foam pieces will lose spongy posture and will become hard.
  • Boil the remaining milk further. Add condensed milk. Dilute the cornflour with half a cup of cool liquid milk and add to the milk mixture. Add sugar and boil until the milk is thickened and the color turns to light yellow. Put the milk over the foam pieces in the serving dish. Foam pieces will float and decorate those with cherry slices or nuts slice, or as you like.

1/4 c softened butter
2 tsp vanilla extract
1 1/4 c sugar
2 can(s) crushed pineapple, 20 oz each
1 c walnuts
2 box vanilla wafers
2 box Dream Whip
2 bag(s) coconut

Steps:

  • 1. Create the filling: Mix 1/4 cup of softened butter, 1 tsp of vanilla extract, 1 cup of sugar, walnuts, and crushed pineapple (well-drained).
  • 2. Stack each snowball 4 wafers-high putting filling in between.
  • 3. Mix the frosting: Prepare 2 boxes of Dream Whip according to directions on the box and add in 1/4 cup sugar and 1 tsp vanilla extract. You may need less frosting given that vanilla wafers are made so small these days (they were a lot bigger when I first made this recipe 55 yrs. ago!).
  • 4. Spread the frosting generously over each snowball. Roll them in coconut. Crown with a cherry on top. Refrigerate for 24 hrs. Then, they can be frozen.
