SNICKERS STUFFED PEANUT BUTTER COOKIES

Number Of Ingredients 11

1/2 cup butter (softened)
3/4 cup peanut butter
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 tablespoon milk
1/4 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups flour
About 22 Snickers Minis (unwrapped)

Steps:

  • Cream butter, peanut butter, and both sugars in the bowl of an electric mixer fitted with the paddle attachment. Add egg, vanilla, milk, and salt and baking soda. Mix until combined. Slowly add flour and mix until dough comes together. Chill your dough for at least 30 minutes.
  • Preheat oven to 350°F. Line 2 cookie sheets with parchment or silpat baking mats.
  • Scoop 2 tablespoon sized balls of dough. Press each one flat in the palm of your hand, place a Snickers Mini in the center and wrap the dough around it, rolling to form a ball. Place on cookie sheet 2" apart. Use a fork to make a small criss-cross pattern on the top. They won't flatten because of the Snickers, but they'll have the pattern.
  • Bake for 13-16 minutes, until they just begin to brown. Cool completely and remove from cookie sheets.
  • Store in an airtight container for up to 3 days. They can be frozen in sealable containers or ziploc bags between layers of paper towels for up to one month.

I found this recipe several years ago in an insert in our newspaper. I make them every year for the holidays and always get asked for the recipe. We like them better as a soft cookie, they can be baked a little longer if you like them crunchier.

1 c butter, softened
1 c sugar
1 c brown sugar, firmly packed
1 c peanut butter, creamy
1 tsp vanilla extract
2 large eggs
3 1/2 c all purpose flour, sifted
1/2 tsp salt
1 tsp baking soda
2 pkg snickers miniature candy, (13 oz)
OPTIONAL TOPPING
1/4 c powdered sugar, sifted
2 oz chocolate bark candy coating, melted

Steps:

  • 1. In a large mixing bowl, cream together butter, peanut butter and sugars. Beat until smooth & creamy.
  • 2. Add eggs and vanilla. Beat well.
  • 3. In a separate bowl, sift flour, and combine with baking soda and salt. Add dry ingredients slowly to the peanut butter mixture. Beat until thoroughly combined.
  • 4. Cover dough and chill 3-4 hours or overnight.
  • 5. Unwrap miniature snicker candy. Set aside. Use one tablespoon of dough and form in a ball. (Each ball should be about 1.5 inches in diameter) Flatten the ball, place a candy in the center and wrap dough around it, pinching as necessary. Be sure the candy is completely covered. Roll back into a ball. Repeat with each piece of candy and dough ball. Place dough balls with candy on a parchment lined cookie sheet. Space cookies about 3 inches apart. Bake at 350 degrees for 12 minutes. If you want crunchier cookies, bake about 5 min more. Allow cookies to cool about 5 minutes before removing from pan.
  • 6. Allow cookies to cool. When all cookies are baked and cooled, place them close together on waxed paper or parchment paper on a large work surface. Sprinkle with sifted powdered sugar. Melt chocolate with 1/2 tsp shortening for about a minute in microwave. Stir, add additional time if needed to thoroughly melt. Immediately drizzle chocolate over cookies. ( I use a spoon and move quickly back and forth over the cookies to create smaller drizzle marks.). Let chocolate set before storing.

½ cup unsalted butter

1 ½ teaspoons baking soda

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine peanut butter, 1 cup white sugar, brown sugar, butter, and shortening in a large bowl. Beat with an electric mixer until creamy. Stir in vanilla extract. Beat in eggs.
  • Sift flour, cream of tartar, 1 1/2 teaspoons cinnamon, baking soda, baking powder, and salt together in a separate bowl. Gradually add to the egg mixture and mix well.

Steps:

1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
2 eggs

2 packages (11-1/2 ounces each) miniature Snickers candy bars
GLAZE:
1 package (9-1/2 ounces) Dove dark chocolate candies
1 teaspoon shortening
