Excellent way to get some veggies into our picky little darlings. Can be refrigerated up to 3 days or frozen up to 3 months. When the kiddies were small I used to blend the veggies before adding to the sauce "so they couldn't see them" Excellent diabetic choice as well.

I'm not usually a fan of "stealth" nutrition. I want my kids to learn to eat and enjoy healthy food, and we're working on that. However, I'm not above sneaking in some extra good stuff from time to time, especially when it comes to veggies. Some of them just don't like them no matter how many I make them eat! If I can get some...

Time 45m

Number Of Ingredients 13

2 can(s) crushed tomatoes(28oz.)
1 medium onion, cut in 1in. pieces
1 medium zucchini or yellow squash, slice 1in. thick
1 c shredded carrot
1 c green or red bell pepper, coarsly chopped
1/2 c celery ribs and leaves, roughly chopped
2 Tbsp olive oil
2 tsp sugar
1 tsp garlic powder
1/8 tsp gound black pepper
1/4 c fresh basil, minced*
1/2 c fresh parsley, minced*
1/2 tsp salt, or to taste

Steps:

  • 1. Dump 1 can of the tomatoes into a large saucepan.
  • 2. Dump the other can in a food processor or blender. Add the onion, squash, carrot, bell pepper and celery. Process until veggies are smooth(or mostly smooth). Add to the saucepan with tomatoes.
  • 3. Add olive oil, sugar, garlic and pepper. Heat over med. heat until bubbling, reduce heat to simmer, cover and cook at least 30 min.(I like to let it simmer a lot longer, or even put it in the crockpot for several hours).
  • 4. Add the minced herbs and salt. Simmer for 5-10 more minutes. Serve over pasta.
  • 5. Notes: This can easily be a meat sauce...just brown 1/2-1lb. of ground meat, drain and add to sauce. *fresh herbs have even more antioxidants than a lot of veggies, so including them increases the nutrition of the sauce even more. If you don't have fresh herbs, you can use dried(2t. of basil and 2T of parsley.), and add them when you add the garlic and pepper.

Categories     Pasta     Kid-Friendly

Yield 6-8 people

Number Of Ingredients 19

1 - lb ground turkey
2 - sweet Italian sausage links, remove casings
1 - small to medium onion, chopped
2 - cloves garlic, minced
1 - orange, green or yellow bell pepper, seeded and pureed
1/2 - cup carrots, shredded or pureed
1/2 - cup zucchini, shredded or pureed
1 - medium rib of celery, chopped or pureed
1 - 28 oz can Italian style tomatoes in puree
1 - 14 oz can Italian diced tomatoes, with juice
1 - 6 oz can tomato paste
1/2 - cup water (if using frozen pureed veggies omit the water)
2 - 3 tablespoon sugar
1 - bay leaf
1 - teaspoon dried basil
1/2 - tablespoon dried oregano
1/2 - teaspoon crushed thyme
1 - teaspoon salt
1 - 16 oz package spaghetti noodles

Steps:

  • Directions: In a large sauce pan, crumble the turkey and Italian sausage. Add the onion and garlic and cook over medium heat until the meat is cooked through. Drain off any fat. Add the meat mixture to a 4 - 6 qt crock pot. Stir in the tomato paste and all the canned tomatoes. Use a large spoon to break up the whole tomatoes. Stir in the pureed vegetables (bell pepper, carrots, zucchini, celery). Add the spices, sugar, water and bay leaf. Cover and cook on low for 6 - 8 hours. Stirring occasionally. Serve over cooked pasta. Shredded Vegetables: If using shredded vegetables add the carrots, celery and zucchini when the meat mixture is fully cooked and drained. Continue to cook, stirring, until the vegetables are limp, about 5 minutes.

Tips:

  • Use a variety of vegetables: This will add flavor, texture, and nutrients to your sauce. Some good options include carrots, celery, onions, bell peppers, and mushrooms.
  • Roast your vegetables: Roasting vegetables brings out their natural sweetness and flavor. You can roast them in the oven or on a grill.
  • Use a good quality tomato sauce: The tomato sauce is the base of your dish, so it's important to use a good quality one. Look for a sauce that is made with fresh tomatoes and has a rich, flavorful taste.
  • Add some herbs and spices: Herbs and spices can add a lot of flavor to your sauce. Some good options include basil, oregano, thyme, rosemary, and garlic.
  • Simmer your sauce for a while: Simmering the sauce allows the flavors to meld together and develop. The longer you simmer it, the better it will taste.

Conclusion:

Sneaky spaghetti sauce is a delicious and easy way to get your kids to eat their vegetables. It's a great way to use up leftover vegetables, and it's also a healthy and affordable meal. With a little planning, you can make this sauce in advance and freeze it for later. This makes it a great option for busy weeknights.
