SNEAKY LASAGNA
"Lasagna's always been a family favorite," explains Catherine Yoder of New Paris, Indiana. "But since my children and husband aren't very fond of some veggies, I started 'sneaking' them into this dish and they hardly notice! It feeds a crowd and is great for potlucks or family reunions."

- In a Dutch oven, cook beef over medium heat until no longer pink. Meanwhile, cook vegetables according to package directions; drain. Finely chop the vegetables; place in a bowl. Stir in eggs and cottage cheese; set aside., Drain beef; stir in spaghetti sauce. Spread 2 cups meat mixture into a greased 13x9-in. baking dish. Top with 4 noodles. Spread half of the vegetable mixture to edges of noodles. Layer with 2 cups meat mixture and 1 cup mozzarella cheese. Top with four noodles, remaining vegetable mixture and 2 cups meat mixture. Layer with remaining noodles, meat mixture and mozzarella cheese., Cover and bake at 375° for 50 minutes or until a thermometer reads 160°. Uncover; bake 5-10 minutes longer or until bubbly and cheese is melted. Let stand for 15 minutes before cutting., , ,

I call it sneaky because my guy claims that he HATES zucchini. One day I had just one lonely zucchini and snuck it in there. He LOVED it, although he was a little upset when I told him what was in it. But hey every time I make it he eats it like it is the best thing he has ever tasted.

Steps:
- 1. pre-heat oven to 375
- 2. cook the lasagna noodles according to the box. Drain
- 3. cook ground meat, onion, celery, and bell peppers until meat it browned. drain and rinse.
- 4. In a medium bowl mix the ricotta cheese, 2 cups of the italian cheese, 1/2 of the parmesan cheese, parsley flakes, italian seasoning,eggs, and salt and pepper together untill smooth.
- 5. in a 9x13 baking dish spread 1/3 c of the sauce on the bottom.
- 6. combine meat mixture with the remaining sauce.
- 7. layer 4 noodles and told with the remaining cheese mixture, zucchini, and half the remaining sauce
- 8. layer 4 more noodles to with remaining sauce and sprinkle the rest of the parmesan cheese. Then finish with the last 2 cups of the italian cheese.
- 9. cover the baking dish the place on a foil lined cookie sheet.
- 10. bake for 1 hour. uncover and bake for another 20 minutes or until cheese is melty and brown
- 11. let stand for at least 20 minutes to cool
