SNAPPY GREEN BEANS

This is a recipe handed down to me by my mom. My husband and kids get excited when they see I have bought green beans, because they know they are in for a treat. As a lower fat option I omit the bacon, and cook the onions in a dash of canola oil. I save the bacon for when I serve it to company.

Time 25m

Yield 2 serving(s)

Number Of Ingredients 6

1 lb fresh green beans
1 teaspoon unsalted butter
1 tablespoon fresh parsley, minced
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1 dash pepper

Steps:

  • Rinse beans then place in steamer basket over water.
  • Bring to boil, then reduce heat & steam about 15 minutes or until crisp tender.
  • In a nonstick skillet, melt butter, then add bean, cooking & stirring until heated through.
  • Remove from heat & add parsley, lemon juice salt & pepper, tossing to coat.
  • Serve immediately.

Tips:

  • Choose fresh, crisp green beans: The fresher the beans, the better they will taste. Look for beans that are a deep green color and have no blemishes.
  • Trim the beans properly: Cut off the ends of the beans, then use a sharp knife to trim off any strings. This will help the beans cook evenly.
  • Blanch the beans: Blanching the beans in boiling water for a few minutes helps to preserve their color and crispness. To blanch the beans, bring a large pot of water to a boil, then add the beans. Cook for 2-3 minutes, or until the beans are bright green and tender. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Cook the beans quickly: Overcooked green beans are mushy and bland. Cook the beans for just a few minutes, or until they are tender but still have a slight crunch.
  • Season the beans well: Green beans are a versatile vegetable that can be seasoned in many different ways. Some popular seasonings include garlic, onion, salt, pepper, and lemon juice.

Conclusion:

Snappy green beans are a delicious and healthy side dish that can be enjoyed all year long.
