8 bacon strips, chopped
1-1/2 pounds fresh green beans, trimmed and cut into 2-inch pieces (about 4 cups)
4 medium potatoes, peeled and cut into 1/2-inch cubes
1 small onion, halved and sliced
1/4 cup reduced-sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove to paper towels with a slotted spoon; drain, reserving 1 tablespoon drippings. Cover and refrigerate bacon until serving., In a 5-qt. slow cooker, combine the remaining ingredients; stir in reserved drippings. Cover and cook on low for 6-8 hours or until potatoes are tender. Stir in bacon; heat through.

Eating home grown snap beans (green beans) is a rite of summer. This is a simple Southern side dish that my entire family loves.

4 medium red potatoes, peeled and quartered (about 1 1/2 lb.)
2 1/4 teaspoons salt, divided
1 lb fresh green beans, broken into 1 1/2 inch pieces
3 slices bacon
1 large onion, sliced
1/4 cup cider vinegar
2 teaspoons dried rosemary, crushed
1/4 teaspoon sugar
1/2 teaspoon pepper

Steps:

  • Cook potatoes and 1 teaspoon (or to taste) of salt in boiling water to cover for 10 minutes or until potatoes are tender.
  • Drain and rinse with cold water; set aside.
  • Cook beans and 1 teaspoon (or to taste) of salt in boiling water to cover for 3-4 minutes or until crisp-tender.
  • Take pan from heat and plunge into icewater (to stop the cooking process).
  • Drain the beans and set aside.
  • Fry bacon in a big skillet until crisp; transfer bacon to a paper-towel lined plate to drain; pour out all but 2 tablespoons of bacon grease; crumble bacon and set side.
  • Saute onion in hot bacon drippings until crisp-tender.
  • Add in remaining salt, vinegar, and remaining ingredients; stir to combine.
  • Add in the potatoes, green beans; cook, stirring occasionally until well heated.
  • Sprinkel bacon crumbles over the top.

This recipe is wonderfully flavorful. Even people who aren't crazy about green beans can enjoy them. Although it does take a while to make, they are well worth it! I got this recipe from the Food Network, courtesy of Paula Deen. If you don't have salt pork, you can use bacon instead. Also, please note that the House Seasoning recipe is for a batch, NOT to be used in this recipe only.

3 pound(s) fresh green beans
1/4 pound(s) salt pork, sliced
1/4 cup(s) bacon grease
2 cup(s) chicken broth, plus more if needed
2 to 3 teaspoon(s) house seasoning, recipe follows
12 small red potaoes
1 - onion, cut into slivers
1/2 stick(s) unsalted butter, sliced
- ground black pepper

Steps:

  • Remove the ends from the beans. Snap the beans into two pieces, place into a colander, wash, and set aside to drain.
  • Meanwhile, in a large cast iron( dutch oven), lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the broth and house seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
  • While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth, if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add the butter and season with pepper.
  • HOUSE SEASONING 1 cup salt 1/4 cup black pepper 1/4 cup garlic powder Mix ingredients together and store in an airtight container for up to 6 months.

6 -8 medium size new potatoes
8 slices bacon

Steps:

  • Wash beans thoroughly. Snap off ends and remove strings.
  • Break into 2 inch pieces.
  • Peel potatoes and cut in half.
  • In a large pot fry bacon, just until it starts to brown.
  • Add the beans and potatoes.
  • Cover with water. Bring to a boil.
  • Reduce heat and simmer on medium for about 1 hour.
  • Salt and pepper to taste.
