This is the easiest way to smother okra. Using this method, the okra can be eaten as is or used as a base for Okra Gumbo. To prepare the gumbo, all that needs to be added to this full batch of cooked okra is about 3 to 4 pounds peeled and deveined shrimp, cooking stovetop for about 20 to 25 minutes after returning to a simmer. Should additional liquid need be added, do so towards the end of the 20 minutes by adding broth, water or shrimp stock to reach desired consistency. Serve gumbo over cooked rice.

4 lbs fresh okra, washed, de-stemmed, sliced (frozen can be substituted)
3 large onions, chopped
2 large green bell peppers, chopped
2 (16 ounce) cans tomatoes with juice (whole, chopped, or crushed)
1/4 cup vegetable oil
3/4 cup water, can substitute chicken broth
5 garlic cloves, minced
1 cup celery (optional)
1 lb ham seasoning, small diced
salt
pepper

Steps:

  • In a large roasting pot, layer alternately the okra, onions, bell pepper, tomatoes with juice, oil, garlic, celery, ham seasoning, water or broth, salt and pepper.
  • Cover pot tightly and place in 425°F oven.
  • Cook 30 minutes, stir and reduce heat to 350 degrees.
  • Cover and cook 2 - 2 1/2 hours, stirring every 30 minutes.
  • When the stringing of the okra ceases, the okra is cooked.
  • Remove from oven and allow to cool.
  • Chill COMPLETELY before packaging and freezing.

7 cups chicken or shrimp stock
3 tablespoons corn oil
1 onion, finely diced
8 ounces salted pork meat, diced
8 ounces ham, diced
3 garlic cloves, minced
1 rib celery, finely diced
1 green bell pepper, finely diced
8 ounces mild smoked sausage, diced
8 ounces hot smoked sausage, diced
3 cups Slow Cooker Smothered Okra, recipe follows
1 1/2 pounds small shrimp (51/60), peeled
1/4 cup snipped fresh parsley
1/4 cup thinly sliced green onions
Salt and red pepper flakes
8 ounces crab claw meat
Four 12-ounce bags frozen cut okra
1/4 cup corn oil

Steps:

  • In a medium saucepan, heat the stock and keep warm.
  • In a large pot over medium heat, add the oil and onions and saute, stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes. Add a little hot stock if needed to avoid burning and to keep the onions soft.
  • Add the salted pork and ham and cook for 10 minutes. Add the garlic, celery, bell pepper and 1 cup stock and simmer for 15 to 20 minutes. Add the mild and hot smoked sausages and simmer for 10 minutes. Add the remaining stock and the Slow Cooker Smothered Okra and cook until thickened slightly, 15 minutes. Stir in the shrimp, parsley and green onions and add salt and red pepper to taste. Cook another 5 to 8 minutes, then turn off the heat and stir in the crab.
  • Combine the okra and oil in a slow cooker and stir well. Cover and cook on high until tender, 3 to 4 hours. Stores well in ziptop bags in the freezer.

8 ounce(s) fresh mushrooms ,sliced
1 - 14 oz.can diced tomatoes with juice
1 - 6 oz. can tomato paste
1 teaspoon(s) file powder
2 - bay leaves
1 teaspoon(s) salt
1 teaspoon(s) ground blk pepper
2 tablespoon(s) vegetable oil
1 tablespoon(s) vegetable oil
2 tablespoon(s) flour
1 clove(s) garlic, minced
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
- cooked rice

Steps:

  • heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  • heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.
  • spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice
