Time 40m

Number Of Ingredients 11

3 slices thick-cut bacon, diced
1 small Vidalia onion, diced
2 cloves garlic, minced
2 (14.5 ounce) cans diced tomatoes, NOT drained ((see note below to use fresh tomatoes instead))
1 tablespoon sugar
2 teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
1 dried bay leaf
½ teaspoon apple cider vinegar
½ teaspoon Worcestershire sauce
2 cups fresh or frozen okra, stems trimmed and cut into ½ -inch pieces
Salt and pepper, to taste

Steps:

  • In a large skillet or Dutch oven, cook bacon until the bacon is starting to get crispy and the fat is rendered, about 5 minutes.
  • Add the onion and garlic; saute for 5 more minutes.
  • Stir in tomatoes (with their juices), sugar, thyme, bay leaf, vinegar and Worcestershire sauce. Use the juices from the tomatoes to deglaze the pan, scraping up the browned bits from the bottom. Reduce the heat to low and simmer, uncovered, for 10 minutes.
  • Add the okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender (about 10-12 minutes for fresh okra or 7-8 minutes for frozen okra).
  • Remove the bay leaf. Season with salt and pepper, to taste. Serve immediately.

SMOTHERED OKRA AND TOMATOES

I love okra !! yummy. This Recipe has come from watching my aunt as I was a little girl making this delicious concoction, the smell of this cooking oh my!! This recipe comes from south Louisiana, If you have some okra lovers, I suggest doubling this recipe. Also this recipe can be used with squash instead of okra, it is just as delicious as the okra!!! Just don't use the tomatoes with the squash, not unless you would like it that way, but do try the squash once without the tomatoes.

Tips:

  • Choose fresh, tender okra: Look for okra that is small and has a deep green color. Avoid okra that is large, woody, or has brown spots.
  • Trim the okra properly: Cut off the stem end of each okra and slice it in half lengthwise. Then, use a sharp knife to remove the seeds from the center of each okra half.
  • Soak the okra in vinegar: This will help to reduce the okra's sliminess. To do this, simply place the okra in a bowl of vinegar and let it soak for 15 minutes. Then, drain the okra and rinse it well.
  • Cook the okra over medium heat: This will help to prevent the okra from becoming tough. If you cook the okra over high heat, it will brown too quickly and become tough.
  • Use a good quality cooking oil: Olive oil or avocado oil are both good choices for cooking okra. Avoid using vegetable oil or canola oil, as these oils can make the okra slimy.
  • Season the okra well: Okra has a mild flavor, so it is important to season it well. Use a variety of spices, such as salt, pepper, garlic powder, onion powder, and paprika.
  • Serve the okra immediately: Okra is best served immediately after it is cooked. If you let it sit for too long, it will become slimy.

Conclusion:

Smothered okra and tomatoes is a delicious and easy-to-make dish that is perfect for a summer meal. The okra is tender and flavorful, and the tomatoes add a sweet and tangy flavor. This dish is also a good source of vitamins and minerals, including vitamin C, vitamin K, and fiber. So next time you are looking for a healthy and flavorful dish, give smothered okra and tomatoes a try!
