Smothered Okra and Tomatoes image

I love okra !! yummy. This Recipe has come from watching my aunt as I was a little girl making this delicious concoction, the smell of this cooking oh my!! This recipe comes from south Louisiana, If you have some okra lovers, I suggest doubling this recipe. Also this recipe can be used with squash instead of okra, it is just as delicious as the okra!!! Just don't use the tomatoes with the squash, not unless you would like it that way, but do try the squash once without the tomatoes.

Yield 4 servings

Number Of Ingredients 11

Ingredients
1/2 cup chopped onion (1 medium)
1/2 cup chopped green sweet pepper
2 cloves garlic, minced
2 tablespoons butter or margarine
8 ounces whole okra, cut into 1/2-inch pieces (2 cups), or 2 cups frozen cut okra, thawed
2 cups chopped, peeled tomato (2 large)
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)
2 slices bacon, crisp-cooked, drained, and crumbled (optional)

Steps:

  • 1. In a large skillet cook and stir onion, sweet pepper, and garlic in hot butter over medium heat about 5 minutes or until tender. Stir in okra, tomato, salt, pepper, and, if desired, cayenne pepper. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes for fresh okra (10 minutes for thawed okra) or until okra is very tender. If desired, sprinkle with bacon.

Tips:

  • Choose fresh, tender okra: Look for pods that are bright green, firm, and free of blemishes.
  • Trim the okra properly: Cut off the stem end and the blossom end of each okra pod.
  • Soak the okra in vinegar water: This helps to remove the okra's sliminess.
  • Use a well-seasoned cast iron skillet: This will help to create a flavorful crust on the okra.
  • Don't overcrowd the skillet: Cook the okra in batches if necessary to avoid steaming.
  • Cook the okra until it is tender but still slightly crispy: Overcooking will make the okra mushy.
  • Serve the okra immediately: This dish is best enjoyed hot.

Conclusion:

Smothered okra is a classic Southern dish that is easy to make and packed with flavor. The combination of tender okra, savory tomatoes, and onions is sure to please everyone at the table. Whether you serve it as a main course or a side dish, smothered okra is a delicious and satisfying meal.
