Hamburger Steaks with Onion and Mushroom Gravy image

This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 17

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

Time 22m

Yield 6 serving(s)

Number Of Ingredients 16

3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
30 ounces cube steaks
2 tablespoons vegetable oil
2 cups beef broth or 2 cups beef bouillon
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/3 cup all-purpose flour
1/4 cup water
1/3 cup red Burgundy wine
1 cup thinly sliced mushroom
1 tablespoon butter or 1 tablespoon margarine
2 teaspoons Kitchen Bouquet
salt, to taste
pepper, to taste
minced garlic

Steps:

  • For steaks, in shallow bowl, mix flour, salt, and pepper.
  • Coat meat with flour mixture, shaking off excess.
  • Heat oil in large skillet over medium heat.
  • Add meat and cook on both sides until almost cooked through and no red juices appear. Remove from heat and set aside.
  • For gravy, in large saucepan, bring broth and soup to a boil.
  • In small bowl, mix flour and water until flour is completely dissolved.
  • Add to gravy, stirring constantly.
  • Continue cooking, stirring frequently, until mixture thickens.
  • Stir in wine.
  • In small skillet, cook mushrooms in butter 3 to 4 minutes.
  • Add to gravy with browning sauce and seasonings.
  • Heat oven to 350°F
  • Place meat in a shallow baking pan large enough to hold a single layer.
  • Top with half the gravy. Cover with foil.
  • Bake 12 minutes.
  • Serve with remaining gravy.

Tips:

  • Prep your ingredients beforehand: Chop the vegetables, mix the spices, and measure the ingredients before starting to cook. This will make the cooking process smoother and faster.
  • Use fresh, high-quality ingredients: The fresher the ingredients, the better your dish will taste. Look for vegetables that are crisp and brightly colored, and meat that is well-marbled and free of gristle.
  • Don't overcrowd the pan: When cooking the hamburger steaks, make sure to give them enough space in the pan so that they can brown evenly. If you overcrowd the pan, the steaks will steam instead of brown.
  • Cook the hamburger steaks over medium heat: This will help them cook evenly without burning. If you cook them over high heat, they will brown too quickly on the outside and remain raw on the inside.
  • Baste the hamburger steaks with the mushroom sauce: This will help keep them moist and flavorful. You can also use red wine as a substitute to deglaze the pan and add a deeper flavor.
  • Let the hamburger steaks rest before serving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Conclusion:

Smothered hamburger steak with mushrooms is a classic comfort food that is easy to make and loved by people of all ages. With its rich, flavorful sauce and tender, juicy meat, this dish is sure to be a hit at your next family dinner or potluck. So next time you're looking for a quick and easy meal that is sure to please everyone, give this smothered hamburger steak recipe a try.
