SMOTHERED CHICKEN WITH CREAMY MUSHROOM GRAVY
A nice quick entree after a hectic day at work. From Bon Appetit magazine. I saute the chicken longer than the time specified to make sure it's cooked through, or pound the breasts thinner.

- Thicken the Gravy: If you prefer a thicker gravy, add a cornstarch or flour slurry (equal parts starch and water) to the simmering gravy and whisk until desired consistency is reached.
- Use a Variety of Mushrooms: Feel free to mix and match different types of mushrooms, such as cremini, shiitake, or oyster mushrooms, to add depth of flavor to the gravy.
- Season to Taste: Always taste the gravy and adjust the seasoning accordingly. You may need to add more salt, pepper, or herbs to achieve the desired flavor.
- Serve with Your Favorite Sides: Smothered chicken with creamy mushroom gravy pairs well with mashed potatoes, rice, pasta, or roasted vegetables.
- Garnish for Presentation: Before serving, sprinkle some fresh chopped parsley or chives over the chicken and gravy for an appealing presentation.
