Smothered Chicken with Rice image

This is definitely one of my favorite recipes to prepare for my family! Number Of Ingredients 10

6-8 small chicken thighs
2 Tbsp olive oil
3 tsp minced garlic
3 can(s) cream of mushroom soup
2 c fresh sliced mushrooms
1 1/2 c milk
3 c instant white or brown rice (prepared)
salt
fresh ground pepper
garlic powder

Steps:

  • 1. Preheat oven to 350F.
  • 2. Prepare rice according to package, enough to cover the entire bottom of a deep 9x13 glass baking dish (3 servings).
  • 3. In the meantime, in a large skillet heat enough Olive Oil to cover the bottom..coat chicken thighs on both sides with Olive oil as well. Use desired amounts of salt, pepper and garlic powder to flavor.
  • 4. When the Olive Oil is hot, turn heat down to medium to medium-high and add minced garlic to the oil. Let Garlic sauté in the oil for about 1 min, then add Chicken..skin down in the pan.
  • 5. Brown for 15 minutes each side until chicken is golden brown (this locks the flavor into the chicken itself).
  • 6. While chicken is cooking, prepare Cream of Mushroom soup by adding 2-3 cans to a bowl, 1 1/2 cups milk, salt/pepper to taste , garlic powder, 1 tsp minced garlic and finally sliced fresh mushrooms.
  • 7. With a paper towel, brush a small amount of Olive oil around the bottom and sides of the baking dish...add rice and spread out to cover the bottom..add chicken to the baking dish on top of the rice and pour sauce mixture over all.
  • 8. Cover with foil and cook for about 45-50 minutes...uncover, and cook for an additional 20 minutes.
  • 9. I like to make fresh rolls with it..sometimes I'll make my own from scratch, and sometimes I'll buy that Rhodes frozen white roll dough and let it rise all day... A fresh roll with butter really just completes the dish!
  • 10. Serves 4-8 depending on the household appetite!

4 boneless skinless chicken breasts (or chicken thighs)
1 teaspoon olive oil
2 teaspoons cajun seasoning
2 tablespoons butter
1 tablespoon honey
2 mangoes (diced (optional))
handful cilantro (chopped)
1 cup long grain white rice (uncooked)
2 1/4 cups chicken broth (I used low sodium)
1 tablespoon cajun seasoning

Steps:

  • Rub olive oil all over chicken. Season with Cajun seasoning all over.
  • In a large skillet over medium heat, melt butter. Once the butter is just melted, stir in the honey.
  • Add chicken to the pan and brown for 1-2 minutes on each side. Transfer to a plate and set aside.
  • Add rice, cajun, seasoning, and broth to the pan and give it a good stir. Bring to a boil.
  • Reduce heat to a simmer (medium-low), return chicken to pan (place on top of rice), cover, and cook for 15-20 minutes until chicken is cooked through and rice is tender.
  • Fluff rice with a fork and serve chicken and rice with a scoop of mangoes (or alternate option, see notes), fresh cilantro, and lime wedges for squeezing.

1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
1 teaspoon pepper
5 boneless skinless chicken thighs (about 1-1/2 pounds)
3 tablespoons olive oil, divided
2 medium carrots, chopped
1 small onion, chopped
1/2 cup chopped green pepper
2 garlic cloves, minced
1/2 cup white wine or chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup chicken broth
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine flour, salt, garlic powder, Cajun seasoning and pepper. Add chicken thighs, one at a time, and shake to coat. In a large skillet, brown chicken in 2 tablespoons oil in batches. Remove and keep warm., In same skillet, saute carrots, onion and green pepper in remaining oil until tender. Add garlic; cook 1 minute. Add wine, stirring to loosen browned bits from pan. Stir in soup and broth., Return chicken to skillet. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until a thermometer reads 165°. Serve with rice.

well i am going to try to explain to you how to make a dish i have made for many years but really by a pinch here and a pinch there. i never measure anything. but here goes and i hope you really enjoy this i know my family truely has....enjoy

6-8 qt chicken quarters
1 tsp salt and pepper mixed
1/2 tsp garlic powder
1 medium yellow onions chopped
1 small pinch of red pepper.
2 c brown or white rice
2 tsp olive oil, extra virgin
veggies of your choice for 6 people

Steps:

  • 1. heat skillet up then add small amount of olive oil, add chopped onions while it is cooking add seasoning to chicken, then add chicken to skillet. you should have a frying sound.
  • 2. cook chicken til it golden brown on each side. now to remind you chicken being smothered like this doesnt brown as if it is being fried. it has a soft looking brown color. cooking about 15 minutes on each side. then add water covering over the chicken. let it cook for 35 minutes with the lid on it. checking it and stirring it making sure it doesn't stick to the bottom. when u know its done the chicken starts to fall apart. then let simmer til ready to eat.
  • 3. i always cook rice with this its the best. i use brown rice but you can use white. i am sure most of you know how to cook rice in rice pot. i would cook about 2 cups for 6 people. i always add about 2 teaspoons of olive oil for rice not to stick to bottom.
  • 4. while rice is cooking. you can cook veggies for 6 people. after all is down. set down together at table and eat and enjoy.
