2 ½ lbs beef chuck roast cut into chunks
2 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
1 large white onion chopped
1 pkg taco seasoning
2 beef bouillon cubes
1 chipotle pepper in adobo sauce
1 tablespoon adobo sauce
3 cloves garlic minced
1 -19oz can enchilada sauce
1-19 oz can refried beans
8-12inch size flour tortillas
3-4 cups pepper jack cheese

Steps:

  • Heat a large pot or skillet and add oil. Season meat with salt and pepper. Brown the meat cubes 1-2 minutes on each side. Place meat in the slow cooker with chopped onions.
  • Add taco seasoning, chipotle pepper, beef bullion cubes,garlic and enchilada sauce.
  • Cook on high 4-5 hours or low 7-8 hours.
  • Remove meat chunks and shred with two forks.

1 1/2 cups Enchilada sauce
1/2 medium onion (diced)
4 oz green chiles
2 garlic cloves (minced)
2 beef bouillon cubes
salt and pepper
6 large tortillas
2 cups Refried Beans
2 cups shredded cheddar cheese

Steps:

  • Cut the Chuck Roast into 1 to 2 inch cubes, trimming off as much fat as you can. Place the beef into a crock pot and add the enchilada sauce, onion, green chiles, garlic, and bouillon cubes. 1 can Green Chiles (4 oz.)
1/2 onion (chopped)
1 tsp Taco Seasoning
1/2 tsp Salt
1/2 tsp Pepper
6 Burrito Size Flour Tortillas
1 Can Refried Beans ((16 oz.))
2 cups Shredded Cheddar Cheese

Steps:

  • Add the beef, enchilada sauce, green chiles, onion, taco seasoning, salt and pepper to the crock pot.

1 1/2-2 lb stew meat
1 large can enchilada sauce
2 beef bouillon, cubes
1/2 can(s) refried beans
5-7 burrito sized flour tortillas
cheddar cheese, shredded

Steps:

  • 1. In crock pot put beef, enchilada sauce and bouillon and cook on low 7-8 hours (or high 3-4), until beef is fork tender.
  • 2. When beef is done taste and add salt if needed. Heat up refried beans and put oven on broil. On oven proof plate or cookie sheet place tortilla and 1/2 cup of beef and spoonful of beans.
  • 3. Roll into burrito and pour enchilada sauce over to completely cover. Sprinkle with cheese and broil until cheese melts.

1 1/2 lb beef stew meat or top sirloin
1 large can enchilada sauce (at least 19oz)
2 beef bouillon, cubes
1/2 can(s) refried beans
6 large tortillas, flour
1 c cheese, shredded

  • 1. Put meat, bouillon, and enchilada sauce into your crockpot, and cook on high for about 4 hours. (If using your crockpot on high isn't your thing, you can do this on low for 7-8 hours.)
