Yield 12-24 cookies, 12 serving(s)

Number Of Ingredients 11

cooking spray
2/3 cup all-purpose flour
1 teaspoon baking soda
1/2 cup unsalted butter, softened
1 cup creamy peanut butter
1 1/3 cups packed light brown sugar
1 large egg, beaten
3/4 teaspoon vanilla extract
1/2 cup milk chocolate chips
2 tablespoons unsalted butter
1/2 cup marshmallow cream

Steps:

  • Preheat oven to 375°F Lightly coat a cookie sheet with cooking spray. Mix flour and baking soda in a small bowl; set aside.

  • Roll dough into 1-inch balls and flatten with a fork; bake 8 to 10 minutes. Remove from oven and let stand for 10 minutes, then place cookies in the refrigerator for 20 minutes.
  • While cookies cool, place chocolate chips and butter in a microwave-safe bowl; heat about 1 minute, until just melted. Let stand for 30 minutes, or until slightly stiff.
  • Heat marshmallow cream in microwave for 10 seconds to soften. Spread marshmallow on a cookie, chocolate on another and sandwich together. Store finished cookies in the fridge.

Tips:

  • To make the smokies even more decadent, try using a combination of chocolate chips and chopped nuts, such as walnuts, pecans, or almonds.
  • For a fun twist, try drizzling the smokies with melted white chocolate or caramel sauce before serving.
  • If you want to make the smokies ahead of time, bake them according to the recipe and then let them cool completely. Once they are cool, wrap them tightly in plastic wrap and store them in the freezer for up to 2 months. When you're ready to serve, thaw the smokies overnight in the refrigerator or at room temperature for several hours.

Conclusion:

Smokies are a delicious and easy-to-make treat that are perfect for any occasion. Whether you're looking for a quick snack, a dessert to serve at a party, or a gift for a friend, smokies are sure to please. With their rich chocolate flavor and gooey marshmallow center, smokies are a classic American treat that everyone will love.
