8 ounces cream cheese, at room temperature
1/2 cup sour cream

1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Smoked Salmon Spread image

Provided by Geoffrey Zakarian

Time 15m

Yield 6 servings

Number Of Ingredients 10

8 ounces smoked salmon, roughly chopped
1/2 cup mayonnaise
Freshly ground black pepper
3 ounces raw salmon, finely diced
1/2 cup creme fraiche or sour cream
1 shallot, minced
1 lemon, zested and juiced
1/2 cup minced chives
Kosher salt, optional
Crostini, for serving

Steps:

  • In a food processor, add the smoked salmon along with the mayonnaise and some pepper. Pulse just until the salmon is broken up into slightly smaller pieces. Do not overmix.
  • Place the mixture into a bowl and combine with the raw salmon and creme fraiche or sour cream. You may add more or less depending on how creamy you like it. Add the shallot, lemon zest and juice and half the chives. Season with pepper; the mixture will likely not need salt due to the smoked salmon.
  • Transfer the mixture to a shallow wide bowl and cover with the remaining chives. Serve with crostini.

SMOKY AND SPICY ROASTED SALMON

Smoky and Spicy Roasted Salmon image

Inspired by the smoke, spice and sweetness that characterize classic dry barbecue rubs, this super easy salmon recipe skips the grill, making for easy cleanup and a dinner that's doable any night of the week. While a fragrant rub like this one might overpower a milder fish, salmon stands up to strong flavors beautifully. This dish works well with summer picnic sides like coleslaw and potato salad, but it is equally good with roasted potatoes and a simple green salad. The rub is only mildly spicy as written, so add a pinch of cayenne if you'd like a little more kick.

Time 25m

Yield 4 servings

Number Of Ingredients 9

4 (6-ounce) skinless salmon fillets
1 1/2 tablespoons dark or light brown sugar
1 teaspoon kosher salt, plus more for serving
1 teaspoon dry mustard powder
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 to 3 tablespoons olive oil

Steps:

  • Heat the oven to 450 degrees. Pat the salmon fillets dry with a paper towel and place them in an ovenproof baking dish large enough to hold them without crowding.
  • In a small bowl, combine the brown sugar, salt, mustard powder, paprika, chili powder, pepper and garlic powder; mix well with a fork.
  • Sprinkle the spice rub over the fillets, then turn them, pressing gently, to coat all sides with the rub. Brush the fillets all over with the olive oil.
  • Roast the salmon for 12 to 14 minutes, depending on the thickness of the fillets, until it flakes easily and is just cooked in the center. Let the salmon rest for 5 minutes, then sprinkle lightly with salt and serve.

Tips for Making the Best Smoked Salmon Spread:

- Use high-quality smoked salmon for the best flavor. Look for wild-caught, sustainably sourced salmon that has been cold-smoked. - Don't over-mix the spread. Over-mixing can make the spread tough and dense. Mix just until the ingredients are combined. - Serve the spread chilled. This will help the flavors to meld and will make the spread easier to spread. - Garnish the spread with fresh herbs, such as dill or chives, before serving. This will add a pop of color and flavor.

Conclusion:

Smoked salmon spread is a delicious and versatile appetizer or snack. It can be served on crackers, bread, or vegetables. It can also be used as a filling for sandwiches or wraps. With its smoky flavor and creamy texture, smoked salmon spread is sure to be a hit at your next party or gathering.
