SMOKY POTATO SOUP

Smoky Potato Soup image

This soup is a variation of my Irish mother's potato soup. I won third prize in the San Diego Union's Potato Recipe Contest. I love the combination of rosemary and garlic in this soup. I use an immersion blender and lightly puree the soup, rather than putting it in my traditional blender...much much safer!

Tips:

  • For a creamier soup, use Yukon Gold or russet potatoes. They have a higher starch content than other varieties, which will help to thicken the soup.
  • To make the soup ahead of time, cook it according to the recipe and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months. When you're ready to serve, reheat the soup over medium heat until warmed through.
  • If you don't have smoked paprika on hand, you can use regular paprika instead. Just add a pinch of smoked salt or chipotle powder to give the soup a smoky flavor.
  • Serve the soup with a dollop of sour cream, crumbled bacon, or chopped chives for garnish.

Conclusion:

This smoky potato cheese soup is the perfect comfort food for a cold winter day. It's easy to make and packed with flavor. The smoked paprika gives the soup a deep, rich flavor, while the potatoes and cheese make it creamy and satisfying. Serve this soup with a side of crusty bread or crackers for a delicious and filling meal.
