SMOKY CORN SALSA (BON APPéTIT)

Smoky Corn Salsa (Bon Appétit) image

This is a really delicious and addictive salsa with a smoky flavour from the grilled vegetables. The recipe is from the Bon Appétit Test Kitchen (August 2009). Make a batch of this versatile sauce, then serve it all week. You can spoon it over grilled fish, chicken, or meats-or use it to fill quesadillas or burritos. It's even good served as a bruschetta on a sliced baguette.

EASY CORN SALSA

Easy Corn Salsa image

I had to make something QUICK for a Mexican themed birthday party, so I threw this together and got RAVE reviews. Some ate it separately most though added it to their burrito and/or fajita mixin's...As usual, I rarely measure, so these measurements are appproximate and by memory...sorry! TRY to make the night before, but it's still good when made on the fly!

Number Of Ingredients 14

Salsa
1 1/4 cups frozen corn kernels, thawed
1/4 cup chopped red onion
1/4 cup chopped red bell pepper
1/4 cup chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
2 teaspoons chopped seeded jalapeño chili
Chicken
1/2 cup dark beer
1 tablespoon low-sodium soy sauce
1 tablespoon chopped fresh cilantro
2 teaspoons chopped seeded jalapeño chili
2 teaspoons fresh lime juice
4 skinless boneless chicken breast halves

Steps:

  • For Salsa:
  • Combine all ingredients in bowl. Season with salt and pepper. (Can be made 4 hours ahead. Cover and chill.)
  • For Chicken:
  • Combine first 5 ingredients in medium bowl. Add chicken and turn to coat. Cover and refrigerate at least 1 hour or up to 4 hours.
  • Preheat barbecue (medium-high heat) or preheat broiler. Drain chicken. Season with salt and pepper. Grill or broil chicken until just cooked through, about 4 minutes per side. Cut chicken into thin diagonal slices. Arrange chicken on plates. Top with salsa and serve.

Tips:

  • Use Fresh Ingredients: The fresher the ingredients, the better your salsa will taste. Look for ripe tomatoes, sweet corn, and crisp peppers.
  • Roast the Corn: Roasting the corn adds a smoky, flavorful depth to the salsa. You can roast the corn in the oven or on the grill.
  • Use a Variety of Peppers: Different peppers offer different levels of heat and flavor. For a milder salsa, use bell peppers. For a spicier salsa, use jalapeños or serrano peppers.
  • Add Some Herbs: Herbs like cilantro, basil, or mint can add a refreshing brightness to the salsa.
  • Use Fresh Lime Juice: Fresh lime juice adds a bright, acidic flavor to the salsa. Avoid using bottled lime juice, as it doesn't have the same fresh flavor.
  • Season to Taste: Be sure to taste the salsa before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or lime juice.

Conclusion:

Smoky corn salsa is a delicious and versatile dish that can be enjoyed as a dip, a topping, or a side dish. It's easy to make and can be tailored to your own taste preferences. Experiment with different ingredients and seasonings to find your perfect salsa recipe.
