SMOKY AND SPICY JERK-MARINATED CHICKEN

Smoky and Spicy Jerk-Marinated Chicken image

This recipe started as a mistake when I was trying to make another recipe I found on here called 'Delectable Marinated Chicken.' While at the store I accidentally bought 'Caribbean Jerk Marinade' instead of teriyaki sauce and rather than go back to the store, I decided to wing it and see what happens. I ended up liking the results enough that I decided to replace the store-bought sauce with a jerk spice mixture, and this recipe was born.

1 teaspoon red pepper flakes
1 teaspoon habanero (Scotch bonnet) chili powder
½ teaspoon ground thyme
½ teaspoon ground coriander
½ teaspoon ground allspice
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

2 tablespoons freshly squeezed lime juice
1 tablespoon molasses
1 teaspoon liquid smoke flavoring

Tips:

  • Choosing the Right Chicken: Opt for boneless, skinless chicken breasts or thighs as they're lean and yield the best texture for jerky.
  • Slicing Technique: Cut the chicken against the grain into strips of about 1/4-inch thick for optimal texture and even cooking.
  • Marinating the Chicken: To infuse flavor and tenderize the chicken, prepare a marinade using ingredients like soy sauce, Worcestershire sauce, smoked paprika, brown sugar, and garlic powder. Let the chicken marinate for at least 30 minutes, or up to overnight for deeper flavor.
  • Smoking Process: Use a smoker set to 180-200°F (82-93°C) to create a smoky flavor. Hickory or mesquite wood chips are popular choices for imparting a rich, smoky taste.
  • Drying the Jerky: After smoking, transfer the chicken jerky to a dehydrator set to 160-165°F (71-74°C) for 4-6 hours, or until the jerky is dry and leathery.
  • Checking for Doneness: To ensure the jerky is safe to consume, it should reach an internal temperature of 160°F (71°C) as measured with a meat thermometer.
  • Storing the Jerky: Store the cooled jerky in an airtight container or resealable bags in a cool, dry place for up to 2 weeks. For longer storage, freeze the jerky for up to 3 months.

Conclusion:

Homemade chicken jerky is a delectable and nutritious snack that's easy to make with the right ingredients and techniques. Experimenting with different marinades and smoking woods allows for endless flavor variations. Whether you prefer a spicy, sweet, or smoky taste, the possibilities are limitless. Enjoy your homemade chicken jerky as a healthy on-the-go snack, a flavorful addition to salads, or even as a protein-packed topping for your favorite dishes.
