Time 25m

Yield 4 sandwiches

Number Of Ingredients 11

4 sandwich-sized ciabatta rolls, split through the middle
1 large red onion, cut into 1/4-inch-thick rings
5 tablespoons olive oil, plus more for drizzling
Kosher salt
1 cup loosely packed fresh basil leaves, cut into chiffonade
1/2 cup smoked almonds, chopped
1/4 teaspoon crushed red pepper flakes
3 large heirloom tomatoes, preferably mixed colors, sliced 1/4 inch thick
Freshly ground black pepper
1 pound fresh mozzarella, sliced 1/4 inch thick
1 cup arugula

Steps:

  • Preheat the oven to 350 degrees F.
  • If your ciabatta rolls are very bready, pick out a little of the crumb. Put the rolls on a baking pan and bake until warm and crisp on the outside, about 10 minutes.
  • Meanwhile, heat a small grill pan or cast-iron pan over medium-high heat until very hot. Toss the red onion in 1 tablespoon of the oil and sprinkle with a little salt, then grill, turning occasionally, until slightly softened and charred in spots, about 6 minutes.
  • Stir together the basil, smoked almonds, crushed red pepper, 1/4 teaspoon salt and the remaining 4 tablespoons olive oil in a bowl.
  • Arrange the bottom halves of the ciabatta rolls on a work surface. Drizzle with a little olive oil, then arrange the tomatoes on top; sprinkle with salt and pepper. Next, top evenly with the onions, followed by the almond mixture. Lay the mozzarella on top; sprinkle with salt and pepper and drizzle with a little more olive oil. Top with the arugula and serve immediately.

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 14

3 tablespoons extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
1 small bulb fennel, trimmed, cored and finely chopped
1 small Japanese eggplant, finely chopped
2 cloves garlic, finely chopped
Pinch of red pepper flakes
Kosher salt and freshly ground pepper
1 pint grape or cherry tomatoes, halved
1/2 cup pitted kalamata olives, halved
1 tablespoon red wine vinegar
1 round or oval loaf Italian peasant bread (about 8 inches)
1/2 cup fresh basil, roughly chopped
1/4 cup grated ricotta salata cheese, plus more for topping
Crackers and/or crudités, for serving

Steps:

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, fennel and eggplant and cook, stirring occasionally, until tender, 10 to 12 minutes. Stir in the garlic, red pepper flakes, 1 teaspoon salt and a few grinds of pepper. Add 1/4 cup water and cook, stirring, until the water is absorbed, about 2 minutes.
  • Stir in the tomatoes and cook, stirring occasionally, until slightly softened, 3 to 5 minutes. Remove from the heat and stir in the olives and vinegar. Let cool about 20 minutes, stirring occasionally.
  • Meanwhile, preheat the oven to 400 degrees F. Using a small serrated knife, hollow out the bread loaf, leaving a 1/2-inch-thick shell. Slice the cut-out bread into pieces and arrange on a baking sheet; drizzle with olive oil and season with salt and pepper. Bake until slightly toasted, 5 to 8 minutes.
  • Stir the basil and cheese into the vegetable mixture; season with salt and pepper. Fill the loaf with the dip and top with more cheese. Drizzle with olive oil and serve with the toasted bread and crackers and/or crudites.

Tips:

  • Use a high-quality bread bowl. A sturdy bread bowl will hold up well in the oven and won't get soggy. Look for a bread bowl that is at least 6 inches in diameter and has a thick crust.
  • Hollow out the bread bowl before filling it. This will make it easier to fill the bread bowl and will prevent the filling from spilling over. Use a sharp knife to carefully cut a circle around the top of the bread bowl, then scoop out the center of the bread. Leave about 1 inch of bread around the edges of the bowl.
  • Don't overcrowd the bread bowl. When filling the bread bowl, be sure to leave some space at the top so that the filling can expand while it bakes. Otherwise, the filling may overflow and make a mess.
  • Bake the bread bowl at a high temperature. This will help to create a crispy crust on the bread bowl and will prevent the filling from becoming soggy. Bake the bread bowl at 375 degrees Fahrenheit for 20-25 minutes, or until the bread bowl is golden brown and the filling is heated through.

  • Let the bread bowl cool slightly before serving. This will make it easier to cut and serve the bread bowl. Let the bread bowl cool for 5-10 minutes before slicing and serving.
