Our local meat market (Cason's in North Portland) has these glorious smoked turkey legs. Every time we go in there we try to think of what we can do with one of those things. Well, this is what I came up with and it's fantastic!

1 lb dry blackeye peas, soaked overnight
1 smoked turkey leg
1 small red onion
2 stalk(s) celery
3 clove garlic
1 Tbsp creole seasoning
1 bunch thyme, leaves
3 bay leaves
1 tsp kosher salt (to taste depending on creole seasoning)
2 c chicken stock
water to cover

Steps:

  • 1. Soak beans overnight and rinse. Add to 6+ qt. crock pot. Nestle smoked turkey leg into beans.
  • 2. Pour in 2 cups chicken stock then cover beans with water.
  • 3. Chop onion, celery and garlic. Add to pot with remaining ingredients.
  • 4. Cook on low 5-6 hours until beans are tender and turkey is cooked.
  • 5. Remove turkey carefully onto plate and cool enough to handle, then shred turkey meat back into crock pot. Serve and enjoy!

1 smoked turkey leg
3 links hot beef link sausage, diced
ΒΌ cup finely chopped onion
1 tablespoon garlic salt
1 teaspoon ground black pepper
1 teaspoon seasoned salt
6 cups water, or as needed
3 (16 ounce) packages frozen black-eyed peas
1 teaspoon white sugar

Steps:
