a 16-ounce jar sliced pickled beets
1/4 cup sour cream
freshly ground black pepper
1 smoked trout fillet, skin and bones discarded and fish broken into 1/2-inch pieces (about 1/2 cup)

100g soba noodle
1 tbsp reduced-salt soy sauce , plus extra to serve if you like

125g pack smoked trout fillets, flaked
½ large cucumber , sliced
6 spring onions , finely sliced
sesame seed , to serve
sesame oil , to serve
