1 16-ounce French-bread baguette
2/3 cup olive oil
8 large garlic cloves, finely chopped
1/2 cup chopped fresh basil
1 tablespoon chopped mixed fresh herbs (such as tarragon, thyme, and rosemary)
3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds
2 cups coarsely chopped pitted Mediterranean olives

Steps:

  • Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.

2 slices bread
2 slices tomatoes
2 slices swiss cheese (or your favorite kind)
2 teaspoons mayonnaise (or mayo to your taste)
1 pinch salt
1 pinch pepper
1 pinch italian seasoning
1 pinch garlic powder or 1 pinch minced garlic
2 tablespoons butter

Steps:

  • Spread both slices of bread with a light layer of mayo.
  • Put slice of cheese on one piece of bread.
  • Add tomato slices.
  • Sprinkle with salt, pepper& Italian Seasoning.
  • Cover tomato slices with other slice of cheese, then cover with other piece of bread.
  • In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
  • Also spread butter on top of each side of bread.

2 tablespoons honey
1 tablespoon chopped green onions
1 tablespoon minced fresh parsley
1-1/2 teaspoons lemon juice
1 garlic clove, minced
1/4 teaspoon grated lemon zest
1 teaspoon liquid smoke, optional
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 boneless skinless chicken breast halves (6 ounces each)
1 log (4 ounces) fresh goat cheese
2 tablespoons chopped fresh basil
2 tablespoons butter
2 tablespoons olive oil
Fresh basil leaves, julienned

Steps:

  • Preheat oven to 350°. Place the first 7 ingredients in a small heavy saucepan. Add liquid smoke, if desired. Bring to a boil; reduce heat. Simmer, uncovered, until thickened to consistency of jam, about 25 minutes. Stir in 1/4 teaspoon salt and 1/8 teaspoon pepper. 1 1/2 tablespoon extra virgin olive oil
1 slice local smokehouse bacon, chopped into 1/4 - 1/2 inch pieces
1/2 cup sliced leek
1 medium tomato, diced into 1/3 inch cubes
1/2 cup dry white wine, such as Sauvignon Blanc
1 1/2 tablespoon capers, rinsed
1 tablespoon butter or butter substitute (we use Earth Balance as a butter replacement)
Zest of 1 lemon
2 teaspoons coarsely ground pepper or to taste
1 cup torn or chopped fresh basil leaves
1/2 cup (approximately 3 - 4 ounces) local soft goat cheese in 1/2 inch pieces
Sea salt or kosher salt to taste
4 ounces thin spaghetti or linguini

  • Heat olive oil in a large sauté pan over medium heat, add bacon and cook until lightly brown. Add leeks and cook until soft. Add wine, turn to high and boil until most of the wine has evaporated. Add tomatoes and butter and lower heat. Add salmon, lemon zest, crushed pepper and capers and turn off heart when warmed. 1 1/2 ounces smoked salmon (more if desired)
1/2 ounce goat cheese (about 2 tablespoons)
1 to 2 tablespoons plain yogurt
Several cucumber slices (about 1 1/2 ounces)
A squeeze of lemon
Salt
freshly ground pepper
Chopped chives or dill
2 slices whole-grain sandwich bread, rye bread or a heartier whole-grain country bread

  • In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice.
