1 package sliced Eckrich skinless smoked sausage
8 quartered Yukon gold potatoes.
1 green pepper, diced
1 yellow pepper, diced
2 tablespoons butter
1 teaspoon oregano.
1 teaspoon basil
1/2 teaspoon black pepper
2 teaspoons olive oil

Steps:

  • Preheat the oven to 375°F. In a pan, arrange the sausage, potatoes and peppers and place the butter over the top in small cubes. Drizzle with olive oil and season on top. Bake covered for 40 to 50 minutes.

1-3/4 cups water
2/3 cup whole milk
5 tablespoons butter, divided
1/2 teaspoon salt
2-2/3 cups mashed potato flakes
1 cup sour cream
1 cup shredded cheddar cheese
1 pound smoked sausage links, halved lengthwise and cut into 1/2-inch slices
1 cup shredded Monterey Jack cheese
2 tablespoons dry bread crumbs

  • In a large saucepan, bring the water, milk, 4 tablespoons butter and salt to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds or until liquid is absorbed.
