My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

24 oz frzn cauliflower--thawed
1 lb polish sausage/keilbasa
2 1/2 c milk
8 Tbsp butter
8 Tbsp flour
2 tsp salt
2 tsp pepper
3 c cheddar cheese

  • 1. Melt butter in saucepan Add flour, salt and pepper Brown to create a light roux
  • 2. Slowly add milk while stirring w/wire wisk keeping it smooth Cook stirring constantly till thickens

I'm pretty much on a low-carb for life diet and have been for several years so I'm always looking for new recipes and new ideas for something tasty AND that fits within my personal dietary guidlines. This recipe turned out really good and has unlimited options (i.e. beef sausage, hot dogs, chopped ham, chopped up spam or throw in your favorite veggie..) so feel free to get creative with it!!

2 cups cooked cauliflower
2 tablespoons butter
1 cup heavy cream
1/4 teaspoon pepper
1 cup shredded cheddar cheese (divided)
1 lb smoked sausage (I prefer beef sausage)
1/8 teaspoon paprika
vegetables, any you want to add would also work if you prefer, I like mushroom

Steps:

  • Cut smoked sausage in half, lengthwise, and then chop in 1/2 again.
  • (If uncooked, first cook according to package directions until SLIGHTLY browned.).
  • Put cooked cauliflower into 2 quart casserole dish. Add cooked meat and mix.
  • Melt all remaining ingredients (using 1/2 of the shredded chedder cheese) except for paprika in a saucepan over medium heat until warm, melted and smooth. (Use a wisk and stir constantly.).
  • Pour cheese sauce over cauliflower and meat.
  • Sprinkle remaining shredded cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350 degree oven for 35-45 minutes (watch-just until golden brown on top).

I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a. 1 1/4 cups Original Bisquick™ mix
3/4 cup cornmeal
1 1/2 cups milk

Steps:

  • Heat oven to 450°F. Spray 13x9-inch pan with cooking spray. In pan, mix sausage, vegetables and soup.
  • In medium bowl, stir Bisquick mix, cornmeal, milk, eggs and 1/2 cup of the cheese until blended. Pour over sausage mixture.
  • Bake uncovered 25 to 30 minutes, sprinkling with remaining 1/2 cup cheese for last 1 to 2 minutes of baking, until light brown.

1 head cauliflower, separated into florets
1 cup sour cream
1 cup shredded Cheddar cheese
½ cup crushed corn flakes
¼ cup finely chopped green bell pepper
¼ cup finely chopped red bell pepper
1 teaspoon salt
¼ cup grated Parmesan cheese
1 pinch paprika

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
  • Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
  • Bake uncovered until heated through, 30 to 35 minutes.
