1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. 3 c idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 Tbsp butter
4 Tbsp flour
2 c milk
1/2 tsp salt
1/4 tsp pepper
1/3 c yellow onion, diced
1/2 lb velveeta cheese, diced
1/2 c sharp cheddar cheese, shredded
1 lb smoked sausage
1/8 tsp paprika

Steps:

  • 1. Preheat oven to 350 degrees. Add 1 Tbls butter to a frying pan and saute onions for a few minutes.
  • 2. Cut smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Add sausage to the onions and cook for about 15 minutes, turning frequently to SLIGHTLY brown.
  • 3. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and onions and give it a little toss.
  • 4. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.)
  • 5. Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • 6. Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
