1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

To save time prepare the cornbread recipe up to 2 days in advance or prepare and freeze the cornbread until ready to use in the recipe, I have only made this stuffing using this cornbread recipe so I cannot say how it would be using another cornbread recipe, I use andouille sausage for this but any dry smoked sausage will do, I prefer andouille --- if your shrimp is small you can leave the shrimp whole, I also add in cayenne for heat :)

1/4 cup butter
1 onion, finely chopped
2 stalks celery, finely chopped
1 -2 tablespoon fresh minced garlic (or to taste)
3/4 lb dry smoked sausage
3 green onions, chopped
2 cups canned corn niblets, drained
1 jalapeno pepper, seeded and finely chopped
2 teaspoons cumin (can use less, or adjust to taste)
1 teaspoon cayenne pepper (optional or to taste)
2 -3 tablespoons chopped fresh cilantro
1 1/2 cups milk
3 large eggs, lightly beaten
1 tablespoon seasoning salt (or use white salt to tasste)
black pepper
1 1/4 cups yellow cornmeal
3/4 cup flour
1 -2 tablespoon sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 egg, slightly beaten
3 tablespoons melted butter
1 1/2 cups buttermilk

Steps:

  • For the cornbread; (the cornbread can be prepared up to a day in advance) set oven to 425 degrees.
  • Generously grease a 10-inch oven-proof skillet.
  • Place the buttered skillet in the oven to 5 minutes to heat.
  • In a bowl combine the cornmeal, flour, sugar, baking powder and salt.
  • In another bowl combine the eggs, melted butter and buttermilk; add to the dry ingredients; stir JUST until moistened.
  • Transfer the batter to the hot skillet.
  • Bake at 425 degrees for about 20-25 minutes, or until golden.
  • Cool the baked cornbread and then cut into 1-inch cubes.
  • Arrange in a single layer in a 15 x 10-inch baking sheet.
  • Bake at 350 degrees for about 15-20 minutes or until lightly browned; set aside.
  • For the casserole; butter a 13 x 9-inch baking dish.
  • Melt butter in a large skillet over medium heat; add in onion and celery, saute for about 5 minutes or until softened (add in the garlic the last 2 minutes of cooking).
  • Add in the uncooked shrimp, sausage, green onions, corn and jalapeno pepper; cook stirring constantly until the shrimp JUST begins to turn pink; remove from heat (the shrimp will still be raw).
  • Stir in cumin with cilantro and cayenne (if using) milk and 3 beaten eggs; mix to combine.
  • Add in the cubed cornbread; gently mix with a wooden spoon (it does not matter if the cornbread breaks!).
  • Season with seasoned salt (or white salt and black pepper).
  • Spoon the mixture into prepared baking dish.
  • Bake for about 30-35 minutes at 350 degrees.

1 c quick cooking white hominy grits
1/2 tsp salt
2 - 3 Tbsp butter
1 c shredded, sharp cheddar cheese
1 c shredded, monterey jack cheese
3 beaten eggs
1/2 c milk
1 tsp oil
4 - 5 links, beddar cheddar smoked sausage ( cut lengthwise then cut into bite sized pieces) or your favorite sausage
can add some onion with the sausage - i didn't this time , gives great flavor
1 clove minced garlic is great also, to cook in with the sausage

Steps:

  • 1. Preheat your oven to 350 degree F. Spray a 3 quart casserole dish with nonstick cooking spray or grease. Set aside. Saute the sausage in 1 tsp oil just till it starts to get some caramelization as it's already cooked. If using raw sausage cook until no longer pink, and starting to brown. Drain if needed.
  • 2. In a large saucepan, bring the 4 cups water to a boil. Stir in the grits and salt, reduce heat to medium. Cook for 2 1/2 - 5 minutes; stirring frequently, until nice and creamy.
  • 3. Stir in the cheddar cheese and butter until cheese is melted.
  • 4. Now, stir in the beaten eggs, milk and sausage. Pour into prepared baking dish.

3 cups Idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tbsp butter
4 tbsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 tsp paprika

Steps:

  • Cut sausage in half, lengthwise and then chop into ½ inch half moon cuts. Cook in a saute pan for about 15 minutes turning frequently, until slightly brown. Meanwhile, put cooked and diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix butter, flour, milk, salt, pepper and Velveeta cheese in a saucepan over medium heat until warm, melted and smooth. Use a whisk and stir constantly. Pour white cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top and then sprinkle paprika evenly over the top. Bake in preheated 350°F. oven for 35-45 minutes, until golden brown on top. Note: you can substitute ham for sausage

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2" pieces. Cook in a frying pan for about 15 minutes, turning frequently to slightly brown. Preheat oven to 350°F Place potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix all remaining ingredients (except for shredded cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (stir constantly.) Pour cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top. Bake for 35-45 minutes (watch, until golden brown on top).

2 Tbsp vegetable oil
1 lb smoked sausage or kielbasa
1 1/2 c onion, chopped
1 box au gratin potatoes
3 c hot water
1/4 tsp black pepper
4 c carrots, chopped
20 oz bag(s) chopped broccoli
3 c sharp cheddar cheese, shredded

Steps:

  • 1. Cook sausage and onion in oil until onion is tender. In the meantime, run frozen broccoli under running hot water to thaw.
  • 2. Add potatoes, water and pepper and simmer for 10 minutes.
  • 3. Stir in carrots and continue to simmer for an additional 10 minutes.
  • 4. Add thawed broccoli and cook for an additional 10 minutes.
  • 5. Finally, add cheddar, stirring just until cheese has melted.
  • 6. Serve immediately

1 lb smoked sausage or 1 lb kielbasa, cut in 1/2-inch pieces
1 (14 1/2 ounce) can sauerkraut
1 onions, chopped or 3 tablespoons dried onion flakes
1 tablespoon parsley flakes
1 teaspoon fresh ground black pepper
1/2 teaspoon salt
1 (10 ounce) can cream of mushroom soup
4 ounces spiral shaped pasta
1/2 cup grated parmesan cheese, for top of dish

Steps:

  • Cook sausage and sauerkraut for about 10 minutes stirring together.
  • Cook pasta 9 minutes.
  • While pasta is cooking, stir in soup,seasonings, and onions into sausage and kraut mixture.
  • When pasta is tender, drain, and combine in with other ingredients.
  • Pour into 2 qt baking dish or 9x13 pan. Sprinkle the parmesan on top.
  • Bake covered in 350 degrees oven for 20-30 minutes until heated through.

24 oz frzn cauliflower--thawed
1 lb polish sausage/keilbasa
2 1/2 c milk
8 Tbsp butter
8 Tbsp flour
2 tsp salt
2 tsp pepper
3 c cheddar cheese

  • 1. Melt butter in saucepan Add flour, salt and pepper Brown to create a light roux

Perogies are reasonable and can be made intoa very tasty one dish casserole incorporating a few veggies that even kids will eat. I made a mistake when I reached in the cupboard for a can of Tomato soup and didn't look - opened it and it was Tomato Noodle Soup - It worked great so I am puting the option in the ingredients, The Noodles just melded right into the casserole. I apologize to all that like authentic perogy recipes (I love traditional dishes too) but this is very tasty! Takes minutes to put together . A green salad goes well as a side dish. Double or triple the recipe - Use your imagination with the veggies, great for "clean the fridge".

10 potato & cheese pierogies, cooked
12 ounces your favoite smoked spicy sausage, cut in bite size pieces or make it meatless
3/4 cup raw cauliflower or 3/4 cup broccoli
3/4 cup raw carrot, sliced
3/4 cup raw mushrooms, sliced or 1 (1 ounce) can drained sliced mushrooms
1/2 cup sweet onion, chopped
2 tablespoons hot sauce, to taste (I use Denzil's Peaches & Scream)
1 (10 ounce) can condensed tomato soup or 1 (10 ounce) can tomato noodle soup
salt, to taste
pepper
1/4-1/2 cup shredded cheddar cheese

  • Preheat oven to 350°F.
  • Cook your Perogies according to instructions.
  • Usually about 5 minutes in salted boiling water.
  • Chop your onion, slice the mushrooms, slice the carrots& cut any other veggies into bite size pieces.
  • Lightly grease a 9"x9" baking dish.
  • Place the sausage& veggies in the dish.
  • Place perogies on top, mix the hot sauce with the soup, spoon over the top making sure that each perogy is covered.
  • Lightly cover with foil.
  • Bake for 45 minutes, remove foil, top with cheese reurn to oven uncovered for a further 15 minutes or until the cheese has melted.
