Categories     Casseroles     Entrées - Main Dishes

Time 55m

Number Of Ingredients 12

1 lb smoked sausage links (quartered and diced into ½ inch pieces)
1 onion (small, diced)
1 Tb butter
1 ½ c self-rising cornmeal
½ teaspoon salt
¼ teaspoon chili powder
2 eggs (beaten)
¾ c milk
¼ c vegetable oil
14 oz. creamed style corn (canned)
4 oz. diced green chilies (canned)
1 ½ c shredded sharp cheddar cheese (divided)

Steps:

  • Grease a 9x9 square baking dish, and set it aside for now.
  • In a skillet, sauté the sausage and onion with the butter over medium-low heat until the onions are tender and the sausage is slightly browned. Transfer the sausage mixture to a plate lined with paper towels to drain any excess grease.
  • In your mixing bowl, combine the cornmeal, salt and chili powder.

  • Add 1 cup of the shredded cheese and the sausage mixture. Fold it together.

ONION CORNBREAD

Provided by Leo Tohill

Categories     Quick Breads

Time 35m

Yield 6 serving(s)

Number Of Ingredients 9

1 cup flour
1 cup cornmeal
2 eggs
3 tablespoons sugar
2 teaspoons salt
4 teaspoons baking powder
2 cups milk
1 medium onion
1/4 cup butter

Steps:

  • Chop the onion and sautee it in the skillet with the butter.
  • (It's more butter than you need for the onion, but it will all go into the mix.) In a bowl, fully mix the dry ingredients.
  • Separately, beat the eggs with the milk.
  • Combine the egg and milk mixture and the sauteed onions and butter with the dry ingredients.
  • Pour the mix into the skillet.
  • Place the skillet in a 400 degree oven and bake for about 20 minutes.
  • Enjoy it with honey.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the cornbread will be. Use fresh, sweet cornmeal, and smoked sausage that is flavorful and not too greasy.
  • Don't overmix the batter: Overmixing will make the cornbread tough. Mix the ingredients just until they are combined.
  • Use a hot oven: A hot oven will help the cornbread rise quickly and give it a crispy crust.
  • Don't overcook the cornbread: Cornbread is best when it is slightly moist in the center. Overcooking will make it dry and crumbly.
  • Serve the cornbread warm: Cornbread is best served warm, right out of the oven. You can also toast it or grill it for a crispy crust.

Conclusion:

Smoked sausage and green onion cornbread is a delicious and easy-to-make dish that is perfect for any occasion. With its smoky flavor and crispy crust, this cornbread is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy side dish, give smoked sausage and green onion cornbread a try. You won't be disappointed!
