a little cayenne pepper
200g cooked salmon
100g hot-smoked salmon
6 small rolls , halved
3 tbsp cream cheese
100g smoked salmon

SMOKED SALMON SPREAD

Smoked Salmon Spread image

Provided by Geoffrey Zakarian

Time 15m

Yield 6 servings

Number Of Ingredients 10

8 ounces smoked salmon, roughly chopped
1/2 cup mayonnaise
Freshly ground black pepper
3 ounces raw salmon, finely diced
1/2 cup creme fraiche or sour cream
1 shallot, minced
1 lemon, zested and juiced
1/2 cup minced chives
Kosher salt, optional
Crostini, for serving

Steps:

  • In a food processor, add the smoked salmon along with the mayonnaise and some pepper. Pulse just until the salmon is broken up into slightly smaller pieces. Do not overmix.
  • Place the mixture into a bowl and combine with the raw salmon and creme fraiche or sour cream. You may add more or less depending on how creamy you like it. Add the shallot, lemon zest and juice and half the chives. Season with pepper; the mixture will likely not need salt due to the smoked salmon.
  • Transfer the mixture to a shallow wide bowl and cover with the remaining chives. Serve with crostini.

SMOKED SALMON PICNIC SPREAD

Smoked Salmon Picnic Spread image

From the Chicago Tribune. How can you go wrong with these ingredients? if you do not have Greek-style yogurt, drain your yogurt in a coffee filter for 30 minutes to reduce the water. Serve on sourdough bread, accompanied by a chilled white wine or fruity beer. I also liked it on buttery crackers. Spread can be made a day ahead and refrigerated in a covered container.

But for a delicious change, put a spoonful onto some thick grilled slices of sourdough bread, then top it with a squirt of lemon and a few grinds of pepper.
