Smoked-Salmon Flatbread with Pickled Beet image

What could be better than this bagel-inspired entrée? It combines storebought pizza dough with that favorite combo of smoked salmon and cream cheese (but here we use Boursin, which brings built-in garlic and herbs). Its perfect for a laid back dinner for four, but it can also be turned into an easy and elegant brunch appetizer by being cut into smaller bite-size squares.

Yield 6-12 serving(s)

Number Of Ingredients 9

6 slices smoked salmon
1 medium Spanish onion, thinly sliced
1/2 cup oil
3 tablespoons wine vinegar
1 clove garlic, smashed
salt and pepper
1 small bay leaf
dill
bay leaf

Steps:

  • In a medium deep ceramic bowl, just wide enough to hold a slice of smoked salmon spread out flat.
  • Divide the onion slices into separate rings and arrange alternate layers of smoked salmon and onion in the bowl.
  • Combine the oil, wine vinegar and garlic in a separate bowl and whisk well.
  • Season with salt and pepper and add the bay leaf.
  • Pour the marinade over the salmon and onions, cover tightly and leave to marinate in the refrigerator for 8 to 12 days.
  • When serving, drain off the marinade and garnish each salmon slice with onion rings, bay leaves, fresh dill or both.

Tips:

  • Choose the right salmon: Use high-quality, fresh or frozen salmon for the best results. Look for salmon that is firm and has a bright color.
  • Use a good quality smoker: A good quality smoker will help you achieve the best flavor and texture in your smoked salmon. If you don't have a smoker, you can also use a charcoal grill or oven.
  • Smoke the salmon at a low temperature: Smoking the salmon at a low temperature will help it cook evenly and prevent it from drying out. The ideal temperature for smoking salmon is between 180°F and 200°F (82°C and 93°C).
  • Use a flavorful brine: Brining the salmon before smoking will help it retain moisture and flavor. You can use a variety of different brines, but a simple brine made with salt, sugar, and water is a good place to start.
  • Smoke the salmon until it is cooked through: The salmon is cooked through when it reaches an internal temperature of 145°F (63°C). You can check the temperature of the salmon by inserting a meat thermometer into the thickest part of the fish.

Smoked salmon pickle is a delicious and versatile dish that can be enjoyed in a variety of ways.
