This is a creamy flavorful dish that I've created on my own after trying some less than exciting versions from other cook books and magazines. I hope you enjoy!

1 lb penne or 1 lb other short pasta
1 lb asparagus, cut into 1 & 1/2 in. pieces
3 tablespoons shallots, finely chopped
1 tablespoon butter
2/3 cup half-and-half
1 tablespoon lemon zest, julienne, grated
4 -6 ounces smoked salmon or 4 -6 ounces nova lox
3 tablespoons fresh dill, chopped divided
1/2 teaspoon salt
2 tablespoons locatelli cheese or 2 tablespoons parmesan cheese

Steps:

  • Cook pasta in plenty of boiling salted water per package directions. (al dente).
  • Melt butter in frying pan and add shallots.
  • Sautee' 1-2 minutes until they begin to sweat.
  • Add asparagus and continue to sautee' until crisp-tender.
  • Once the asparagus are crisp-tender add half and half, lemon zest, 2 tablespoons dill and salt. Bring to a light simmer.
  • Drain pasta and add the pasta and the salmon to the cream sauce, lightly toss and heat through. Turn into serving bowl or platter and top with remaining dill and sprinkling of grated cheese.

Coarse salt and ground pepper
12 ounces penne rigate or other short pasta
1 1/2 teaspoons unsalted butter
3 tablespoons minced shallot
1/4 cup dry white wine
1 cup heavy cream
1 teaspoon fresh lemon juice
4 ounces thinly sliced smoked salmon, cut into 1-inch pieces
2 tablespoons chopped fresh chives

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Meanwhile, in a small saucepan, melt butter over medium. Add shallot; season with salt and pepper. Cook until soft, about 5 minutes. Add wine and cook until evaporated, about 5 minutes. Add cream; bring to a boil. Reserve 1/2 cup pasta water; drain pasta and return to pot. Add cream mixture to pasta pot, along with lemon juice, smoked salmon, and chives. If necessary, adjust consistency with reserved pasta water and season with salt and pepper.

12 ounces penne pasta, cooked and drained
2 tablespoons olive oil
1 whole shallot (thinly sliced)
4 roma tomatoes (seeded and chopped)
2/3 cup whipping cream
1 pinch ground nutmeg
2 tablespoons fresh dill (chopped,or 1-2 tsp dried dill weed)
1/3 cup vodka
6 ounces smoked salmon (cut into strips)
white pepper
1 sprig fresh dill (optional)

Steps:

  • Heat oil in a wide frying pan over medium-low heat.
  • Add shallot and cook, stirring often, until soft but not brown (about 3 minutes).
  • Stir in chopped tomatoes, cover and simmer for 5 minutes.
  • Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.
  • Add pasta to sauce and mix lightly using 2 spoons, until pasta is well coated.
  • Remove from heat.
  • Add salmon and mix lightly.
  • Season to taste with white pepper and garnish with dill springs.

1 1/2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces

Steps:

  • Whisk first 6 ingredients in medium bowl. Season with salt and pepper.

1 lb penne (or your favourite shaped pasta like bowties, long pastas like spaghetti don't work as well)
1 cup room temperature cream cheese
1 bunch fresh dill, chopped
4 green onions, sliced
1 lemon, juice and zest of
1 tablespoon Dijon mustard
1/4 cup capers
8 ounces smoked salmon (or more)
sprinkled sea salt & freshly ground black pepper, to taste

Steps:

  • Bring a large pot of salted water on to boil. Season it liberally with salt. When it boils, add your choice of pasta. Cook to el dente, until the pasta is cooked through but still pleasantly chewy.
  • Scoop out 1 cup or so of the starchy cooking water. Drain the pasta but not quite all the way. Leave it a bit wet. Put the pasta back into the pot along with a splash or two of the reserved water, about 1/2 cup or so in total then immediately add the rest of the ingredients.
  • While the pasta is till steaming hot toss well melting the cheese and forming the creamy sauce. Season with salt and pepper. Serve immediately.

1 Tbsp ex vir oo
1 Tbsp butter
2 clove garlic, minced
2 small or 1 large shallot(s), minced
1 c vodka
1 c chicken broth
1 28-oz can plum tonatoes, crushed
1/2 c heavy cream
1 lb penne, cooked al dente (i like mezze penne-the smaller)
1/2 bunch fresh basil, torn into pieces
fresh grated parm, salt & pepper

Steps:

  • 1. Melt butter & oil over med heat. Add shallots & garlic & toss about 2-3 mins. (Don't burn garlic!) Remove from heat.
  • 2. Add vodka & stir. Return to heat. Cook & stir about 7 mins until vodka reduces by half. Add broth & tomatoes (w/juice) & boil. Reduce heat & season w/ salt & pepper. Simmer 20-25 minutes.
  • 3. Whisk in cream & bring to light boil. Remove from heat. Add pasta & basil & toss. Serve w/ Parm on top. NOTE: If you prefer to add smoked salmon, sautee lightly & then place atop or in sauce directly. Yum. :)

1 lb penne pasta
1/3 large sweet onion, minced
2 cloves fresh garlic, minced
1/8 cup olive oil
1/4 cup dry white wine
1/4 cup heavy cream
One package smoked salmon
salt and black pepper to taste

Steps:

  • Boil water. Add pasta and cook according to instructions. While pasta cooks, heat olive oil in a deep frying pan, add onion and garlic. Cook for 2 minutes then add white wine, let simmer. After 5 minutes (or when the wine has been reduced) add cream and salmon and simmer until cream is thickened. Drain pasta and add to the pan. Toss and add salt and pepper to taste.

Tips:
