Yield Makes 2 servings

Number Of Ingredients 8

2 tablespoons sour cream
1 teaspoon finely chopped fresh dill
1/2 teaspoon fresh lemon juice
1 1/2 teaspoons butter
1 tablespoon olive oil
1 large shallot, thinly sliced crosswise (about 1/4 cup)
6 1/3-inch-thick baguette slices, cut on diagonal, or 6 water crackers
1 1/2 ounces thinly sliced smoked salmon, halved lengthwise

Steps:

  • Whisk sour cream, finely chopped fresh dill, and lemon in small bowl to blend. Season to taste with salt and pepper. DO AHEAD: Dilled cream can be made 8 hours ahead. Chill. Rewhisk before using.
  • Melt butter with olive oil in small skillet over medium-high heat. Add thinly sliced shallot, sprinkle with salt and pepper, and sauté until golden brown, 3 to 4 minutes. Transfer sautéed shallots to paper towels to drain completely (shallot pieces will crisp as they cool). DO AHEAD: Crispy shallots can be made up to 2 hours ahead. Let stand at room temperature.
  • Arrange baguette slices or water crackers on plate. Spread thin layer of dilled cream over each baguette slice or cracker. Carefully arrange salmon slices atop, dividing equally. Spoon small dollop of dilled cream atop each, sprinkle with crispy shallots, and serve.

Yield 8 servings

Number Of Ingredients 10

1/3 cup finely chopped shallots (about 2 small)
1 cup crème fraîche
1/2 cup (1 stick) unsalted butter, melted
8 ounces smoked salmon
2 teaspoons finely grated lemon zest
4 teaspoons fresh lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground white pepper
1/4 cup finely chopped chives, plus more for garnish
Rye crackers and flaky sea salt (for serving)

Steps:

  • Pulse shallots, crème fraîche, and butter in a food processor until smooth. Add salmon and process until salmon is coarsely chopped and incorporated, about 15 seconds. Transfer to a medium bowl and stir in lemon zest, lemon juice, kosher salt, pepper, and 1/4 cup chives. Adjust seasonings to taste.
  • Spread rillettes onto crackers, then top with chives and sea salt.
  • Do ahead
  • Rillettes can be made 3 days ahead; cover with plastic wrap, pressing directly on the surface, and chill. Bring to room temperature before serving.

Tips:

  • To ensure even cooking, use uniform-sized salmon pieces.
  • Don't overcrowd the pan when searing the salmon; this will prevent it from cooking evenly.
  • If you don't have a smoker, you can use a stovetop smoker or even a smoker box on your grill.
  • The shallot sauce can be made ahead of time and stored in the refrigerator for up to three days.
  • Garnish the salmon bites with fresh herbs, such as dill or chives, for a pop of color and flavor.

Conclusion:

Smoked salmon bites with shallot sauce are a delicious and elegant appetizer that is perfect for any occasion. They are easy to make and can be prepared ahead of time, making them a great option for busy hosts. The combination of smoky salmon, creamy shallot sauce, and crispy crostini is sure to be a hit with your guests.
